Depuis presque un an, je conserve un paquet de farine de pois chiche dont le contenu dispara&icirc;t aussi vite qu&rsquo;un paresseux qui traverse une route.<\/p>\n\n\n\n<p>Rassure-toi, la date de p&eacute;remption n&rsquo;&eacute;tait pas encore &eacute;chue. Heureusement, j&rsquo;avais la quantit&eacute;, au gramme pr&egrave;s, qu&rsquo;il me fallait pour fabriquer des muffins sal&eacute;s. Les &eacute;toiles &eacute;taient align&eacute;es. Qui plus est, l&rsquo;id&eacute;e de cuisiner pendant des heures ne vibrait pas en moi.<\/p>\n\n\n\n<p>Mais quand j&rsquo;ai constat&eacute; que 10 minutes d&rsquo;effort &eacute;tait la seule chose qui se trouvait entre moi et un lot de mini-cakes sal&eacute;s, ma flemme du samedi soir s&rsquo;est vite transform&eacute;e en une petite danse sur le parquet.<\/p>\n\n\n\n<p>Ces muffins sal&eacute;s sont formidables. Ils sont :<\/p>\n\n\n\n<ul><li>Sans-gluten<\/li><li>Hyperprot&eacute;in&eacute;s (10 g)<\/li><li>Di&eacute;t&eacute;tiques, sains<\/li><li>Rapides (confectionne-les et oublie-les)<\/li><li>Faciles (quatre grandes &eacute;tapes)<\/li><li>Simplissimes (que cinq principaux ingr&eacute;dients)<\/li><li>Accueillants pour les bambins<\/li><\/ul>\n\n\n\n<p>Pourquoi ce dernier point&thinsp;? Parce que c&rsquo;est la couverture parfaite pour dissimuler les l&eacute;gumes. Oui, la fin justifie les moyens.<\/p>\n\n\n\n<p>Ces petits g&acirc;teaux grill&eacute;s et piment&eacute;s ont une mie humide et solide, mais pas lourde. J&rsquo;ai bricol&eacute; la recette d&rsquo;origine pour qu&rsquo;elle soit a&eacute;rienne et moelleuse. Et si tu les manges pendant qu&rsquo;ils sont chauds, tu constateras que le dessus est bien craquel&eacute; et laisse d&eacute;voiler quelques traces de verdure.<\/p>\n\n\n\n<p>Et puis la saveur vient : cette chaleur calme, qui chuchote et qui se laisse le temps d&rsquo;&eacute;clore, plus une sensation qu&rsquo;une saveur. Si tu avales deux ou trois muffins par repas, tu pourras ressentir une sensation de br&ucirc;lure au fond de la gorge, non pas que ce soit un avertissement, mais c&rsquo;est un pr&eacute;ambule d&rsquo;une bouch&eacute;e g&eacute;niale.<\/p>\n\n\n\n<h2 id=\"des-reponses-a-tes-questions-brulantes\"   >Des r&eacute;ponses &agrave; tes questions br&ucirc;lantes<\/h2>\n\n\n\n<div class=\"schema-faq wp-block-yoast-faq-block\"><div class=\"schema-faq-section\" id=\"faq-question-1612396494303\"><strong class=\"schema-faq-question\"><strong><strong>Que sont des muffins sal&eacute;s&thinsp;?<\/strong><\/strong><\/strong> <p class=\"schema-faq-answer\">Ce sont de petits g&acirc;teaux individuels, des muffins ou mini-cakes, s&rsquo;apparentant aux madeleines. C&rsquo;est traditionnellement utilis&eacute; dans la cuisine indienne sous le nom de farine <em>gram<\/em>.<br>&nbsp;<br>En raison de sa texture, on s&rsquo;en sert souvent dans la cuisine v&eacute;g&eacute;talienne pour confectionner des recettes qui contiennent habituellement des &oelig;ufs.<br>&nbsp;<br>Comme elle est enti&egrave;rement fabriqu&eacute;e &agrave; partir de pois chiches, cette farine fournit 21 grammes de prot&eacute;ines par tasse, tandis que la farine tout usage en fournit 13 grammes.<br>&nbsp;<br>Quel go&ucirc;t &ccedil;a a&thinsp;? La farine de pois un chiche a un go&ucirc;t qui rappelle les pois chiches dans la farine, mais seulement discr&egrave;tement. Sa teneur en prot&eacute;ines et en fibres apporte une belle texture au produit final. Tu peux normalement en trouver dans la section des aliments naturels. Sinon, va dans les &eacute;piceries &agrave; ce genre de vocation.<\/p>\n\n\n\n<p><strong>Champignons caf&eacute; &ndash;<\/strong> je pr&eacute;f&egrave;re utiliser les champignons caf&eacute; (crimini) pour sa concentration en antioxydants.<\/p>\n\n\n\n<p><strong>Chou fris&eacute; &ndash;<\/strong> ce crucif&egrave;re est un des feuillus les plus riches en prot&eacute;ines. J&rsquo;aime cuisiner avec pour ses propri&eacute;t&eacute;s antioxydantes et anticanc&eacute;reuses. Tu peux utiliser le chou fris&eacute; vert, le chou de Toscane (alias noir, dinosaure, palmier) ou des &eacute;pinards, tiens.<\/p>\n\n\n\n<p><strong>Boisson de soja non sucr&eacute; &ndash;<\/strong> pour assurer ton apport en prot&eacute;ines. Dans ce cas, je te recommande les boissons &agrave; base d&rsquo;avoine nature (dont le go&ucirc;t est assez neutre), de cajou ou de macadamia (plus cher).<\/p>\n\n\n\n<p><strong>Poireau &ndash;<\/strong> pour le go&ucirc;t, mais pour aussi laisser para&icirc;tre quelques taches de vert.<\/p>\n\n\n\n<h3>Les assaisonnements<\/h3>\n\n\n\n<p><strong>Levure alimentaire &ndash;<\/strong> c&rsquo;est de la levure inactive qui est cultiv&eacute;e sur une culture riche en nutriments. Certaines sont enrichies de vitamine B12, comme celle de la marque Red Star. Gr&acirc;ce &agrave; sa saveur, elle rappelle le go&ucirc;t de fromage et donc, ajoute une profondeur de go&ucirc;t.<\/p>\n\n\n\n<p><strong>Poudre d&rsquo;oignon &ndash; <\/strong>j&rsquo;ai essay&eacute; cette recette avec des oignons frais avant, mais je trouvais que la saveur ne s&rsquo;impr&eacute;gnait pas dans la mie. Alors, j&rsquo;ai chang&eacute; pour de la poudre d&rsquo;oignon et le go&ucirc;t &eacute;tait beaucoup plus rehauss&eacute;.<\/p>\n\n\n\n<p><strong>Poudre d&rsquo;ail &ndash;<\/strong> idem.<\/p>\n\n\n\n<p><strong>Poivre de Cayenne &ndash;<\/strong> pour te r&eacute;chauffer un peu. On dit que combin&eacute; au poivre noir, les propri&eacute;t&eacute;s de son antioxydant, capsa&iuml;cine, sont d&eacute;cupl&eacute;es.<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC4477151\/\"> La capsa&iuml;cine peut avoir un potentiel important pour favoriser la sant&eacute; vasculaire et m&eacute;tabolique.<\/a><\/p>\n\n\n\n<p><strong>Sirop d&rsquo;&eacute;rable &ndash;<\/strong> pour adoucir la p&acirc;te l&eacute;g&egrave;rement. Choisis-en de bonne qualit&eacute;. Du <em>vrai<\/em> sirop d&rsquo;&eacute;rable, et pas ce truc faux, du genre Aunt Jemima.<\/p>\n\n\n\n<p><strong>Sel et poivre &ndash;<\/strong> j&rsquo;aime utiliser le sel casher pour ses fins cristaux. Le poivre est fra&icirc;chement moulu.<\/p>\n\n\n\n<h3>Ingr&eacute;dients divers<\/h3>\n\n\n\n<p><strong>Poudre &agrave; p&acirc;te &ndash; <\/strong>&ccedil;a va lever la p&acirc;te pour avoir une apparence de champignon et un de beaux crat&egrave;res sur le dessus.<\/p>\n\n\n\n<h2 id=\"comment-faire-des-muffins-sales-etape-par-etape\"  >Comment faire des muffins sal&eacute;s &eacute;tape par &eacute;tape<\/h2>\n\n\n\n<p>Confectionner des muffins sal&eacute;s sans fromage, sans &oelig;ufs, sans farine blanche, sans produits laitiers (beurre ou lait) est un jeu
