Elle est exactement ce qu&rsquo;il te faut pour doper l&rsquo;onctuosit&eacute; de tes pr&eacute;parations. <\/p>\n\n\n\n<p>Ajoute-la dans tes soupes, ta sauce Alfredo, ta cr&egrave;me fouett&eacute;e style chantilly, tes glaces...<\/p>\n\n\n\n<p>Elles les &eacute;pouseront sans conteste. Parfois, ils passent compl&egrave;tement dans l&rsquo;oubli.<\/p>\n\n\n\n<p>C&rsquo;&eacute;tait exactement le cas avec la cr&egrave;me moiti&eacute;-moiti&eacute;. Comme je ne bois pas une tasse matinale de caf&eacute;, ce n&rsquo;est pas quelque chose avec laquelle je suis accoutum&eacute;e.<\/p>\n\n\n\n<p>Quand j&rsquo;ai concoct&eacute; ma <a href=\"https:\/\/bitingintolife.net\/fr\/tourte-aux-lentilles-cottage-pie-pate-chinois\/\">tourte aux lentilles fa&ccedil;on cottage pie<\/a> la derni&egrave;re fois, dont la garniture est faite &agrave; partir d&rsquo;une pur&eacute;e de pommes de terre, la recette dont je me suis inspir&eacute;e appelait cet ingr&eacute;dient. &Eacute;videmment, il me fallait tout de suite me trouver une bonne solution de remplacement non laiti&egrave;re.<\/p>\n\n\n\n<p>J&rsquo;ai pu d&eacute;nicher un produit du commerce &agrave; base d&rsquo;amande, mais je n&rsquo;&eacute;tais pas satisfaite du go&ucirc;t final. Il y avait un arri&egrave;re-go&ucirc;t d&rsquo;amande qui m&rsquo;emb&ecirc;tait. Et donc, j&rsquo;ai d&eacute;cid&eacute; de prendre les choses en main et de faire une recette de substitut de cr&egrave;me moiti&eacute;-moiti&eacute; maison.<\/p>\n\n\n\n<p>Et c&rsquo;est tant mieux. Je ne l&rsquo;ai pas du tout regrett&eacute;.<\/p>\n\n\n\n<p>Gr&acirc;ce &agrave; la cr&egrave;me de noix de coco et au lait de noix de cajou, j&rsquo;ai cr&eacute;&eacute; un liquide soyeux qui se boirait bien seul. <strong>Pure et l&eacute;g&egrave;re sur la langue,<\/strong> sa richesse est juste parfaite. Celui-ci peut &ecirc;tre fabriqu&eacute; s&eacute;par&eacute;ment et par la suite ajout&eacute; ou l&rsquo;on peut combiner les noix de cajou aux autres ingr&eacute;dients avec de l&rsquo;eau, et le lait de cajou se fera &agrave; m&ecirc;me le m&eacute;lange.<\/li><li><strong><strong>L&eacute;cithine de soja. <\/strong><\/strong>&Eacute;pais et dor&eacute;, ce liquide est constitu&eacute; de phospholipides extraits d&rsquo;huile de soja. On l&rsquo;utilise pour &eacute;mulsifier ou homog&eacute;n&eacute;iser les acides gras (en g&eacute;n&eacute;ral, on met 1 cuill&egrave;re &agrave; caf&eacute; pour 1 tasse du volume). La l&eacute;cithine de tournesol fonctionne aussi, par contre &ccedil;a donnera un go&ucirc;t de noix l&eacute;ger. Cet ingr&eacute;dient est tout &agrave; fait facultatif. <\/li><\/ul>\n\n\n\n<div class=\"is-layout-flow wp-block-group feast-box-secondary\"><div class=\"wp-block-group__inner-container\">\n<h2 id=\"substituts-de-creme-moitie-moitie-vegetalienne-simples\"  >Substituts de cr&egrave;me moiti&eacute;-moiti&eacute; v&eacute;g&eacute;talienne simples<\/h2>\n\n\n\n<ul><li><strong>Joue avec les laits non laitiers. <\/strong>Le lait de coco agit comme un bon substitut de cr&egrave;me &eacute;paisse, alors je m'en tiendrais. Par contre, tu pourrais substituer le lait de cajou pour n'importe quels laits non laitiers pr&eacute;f&eacute;r&eacute;s. Que ce soit du lait de soja, du lait de riz ou du lait d'avoine. Cependant, tu n'auras pas la m&ecirc;me onctuosit&eacute;. Dans ce cas, tu devras ajouter un agent &eacute;paississant comme de la gomme de xanthane. (Tu pourrais voir certains produits utiliser de la gomme gellane ou de la gomme d'acacia.)<br><br>Le plus simple est d'utiliser des laits v&eacute;g&eacute;taux constitu&eacute;es de fruits coque, car ils contiennent des mati&egrave;res grasses. Plus ils sont gras, plus je les pr&eacute;f&egrave;re. J'y ajoute facultativement la l&eacute;cithine de soja &#9313;. Si tu n'as pas cet appareil, passe le liquide au tamis.<\/p>\n\n\n\n<h2 id=\"quest-ce-que-la-creme-moitie-moitie-de-quoi-cest-fait\"   >Qu&rsquo;est-ce que la cr&egrave;me moiti&eacute;-moiti&eacute;&thinsp;? De quoi c&rsquo;est fait&thinsp;?<\/h2>\n\n\n\n<p>C&rsquo;est si simple&thinsp;! C&rsquo;est une recette am&eacute;ricaine compos&eacute;e de lait &agrave; parts &eacute;gales : une moiti&eacute; de cr&egrave;me &eacute;paisse &agrave; 35 % (alias cr&egrave;me fra&icirc;che liquide, cr&egrave;me liquide ou cr&egrave;me fleurette &#127467;&#127479;), une moiti&eacute; de lait entier. Et vlan&thinsp;! Tu as : moiti&eacute;-moiti&eacute;&thinsp;! La texture est plus &eacute;paisse que le lait, mais moins riche que la cr&egrave;me. Je ne parle pas exactement de moiti&eacute; p&acirc;tissi&egrave;re-moiti&eacute; chantilly, soit la cr&egrave;me capitole, mais on n&rsquo;est pas loin de l&agrave;.<\/p>\n\n\n\n<p>La cr&egrave;me en vedette ne peut pas &ecirc;tre fouett&eacute;e, mais elle ajoute de la richesse sans &ecirc;tre aussi lourde que la cr&egrave;me &agrave; elle seule. C&rsquo;est le milieu parfait.<\/p>\n\n\n\n<p>Et la cr&egrave;me v&eacute;g&eacute;tale moiti&eacute;-moiti&eacute;&thinsp;? On suivra le m&ecirc;me principe et on cherchera une texture riche similaire : une part de lait non laitier, une part de cr&egrave;me de noix de coco.<\/p>\n\n\n\n<p>Par contre, elle sera constitu&eacute;e d&rsquo;un m&eacute;lange de cr&egrave;me de noix de coco et d&rsquo;une moiti&eacute; de lait v&eacute;g&eacute;tal.<\/p>\n\n\n\n<h2 id=\"est-ce-que-la-creme-moitie-moitie-est-mauvaise-pour-la-sante\"  >Est-ce que la cr&egrave;me moiti&eacute;-moiti&eacute; est mauvaise pour la sant&eacute;&thinsp;?<\/h2>\n\n\n\n<p>Partons du principe que les cr&egrave;mes contiennent une bonne quantit&eacute; de graisses. La compr&eacute;hension des pr&eacute;f&eacute;rences quant aux mati&egrave;res grasses dans le lait pourra potentiellement &eacute;clairer tes efforts visant &agrave; modifier tes habitudes de consommation de mati&egrave;res grasses ou &agrave; optimiser les produits de consommation. Alors examinons sa composition et son proc&eacute;d&eacute; de fabrication.<\/p>\n\n\n\n<h3 id=\"h-la-composition\">La composition<\/h3>\n\n\n\n<p>La cr&egrave;me moiti&eacute;-moiti&eacute; traditionnelle est g&eacute;n&eacute;ralement plus grasse que tout type de lait de vache, avec une<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC4702257\/\">&nbsp;teneur en mati&egrave;res grasses qui varie habituellement entre 10,5 et 18 %, tout d&eacute;pendant de sa composition<\/a>.<\/p>\n\n\n\n<p>Fabriqu&eacute;e &agrave; partir de cr&egrave;me &eacute;paisse, elle aura 36 % ou plus de mati&egrave;re grasse&thinsp;; fabriqu&eacute;e &agrave; partir de cr&egrave;me l&eacute;g&egrave;re, elle en aura 17 &agrave; 30 %.<\/p>\n\n\n\n<p>En d&eacute;pit de son nom, la moiti&eacute;-moiti&eacute; sans gras en contient tout de m&ecirc;me : environ 1,4 gramme de graisse pour 100 grammes (3,4 onces). Celle-ci est compos&eacute;e de lait &eacute;cr&eacute;m&eacute; qui a &eacute;t&eacute; &eacute;paissi avec divers additifs, comme le sirop de ma&iuml;s.<\/p>\n\n\n\n<p>Il en r&eacute;sulte un produit riche en glucides qui contient &eacute;galement plus de sodium que tout autre lait ordinaire ou produit moiti&eacute;-moiti&eacute;.
