Elles appr&eacute;cient le Brie cr&eacute;meux sur une baguette croustillante avec des tranches de pomme et un verre de vin et&hellip; Mmmh&nbsp;! Elles sont au paradis&nbsp;!<\/p>\n\n\n\n<p>Donc, si toi aussi es ensorcel&eacute;&middot;e, ce n'est pas de ta faute. Il y a quelque chose dans le fromage qui te donne envie d&rsquo;en manger.<\/p>\n\n\n\n<h2>Pourquoi tu es accro au fromage<\/h2>\n\n\n\n<p>Comment peux-tu ignorer cette d&eacute;licieuse g&acirc;terie&nbsp;? Sa saveur acidul&eacute;e&nbsp;? Sa texture cr&eacute;meuse&nbsp;? Comment peux-tu ignorer toutes ses formes int&eacute;ressantes&nbsp;? Tranch&eacute;, coulant, &eacute;miett&eacute;&hellip; Comment oublier ses souvenirs d'enfance ou ses soir&eacute;es gourmandes entre amis&nbsp;?<\/p>\n\n\n\n<p>Pour la plupart des gens, le fromage a tellement de vari&eacute;t&eacute;s, toutes plus sensuelles les unes que les autres, qu'il est difficile de s'en abstenir, de l'&eacute;liminer. Veux-tu entendre quelque chose de fou&nbsp;?<\/p>\n\n\n\n<p>Certains ont des envies de fromage dans les petites heures de la nuit. Les petites heures de la nuit !!<\/p>\n\n\n\n<p>Tu veux savoir quelque chose&nbsp;? Il y a une raison &agrave; cette d&eacute;pendance. Parce que <em>c'est<\/em> une addiction&nbsp;!<\/p>\n\n\n\n<p>Les chercheurs ont d&eacute;couvert que la cas&eacute;ine, une prot&eacute;ine du lait, se d&eacute;compose en casomorphines pendant la digestion, produisant des effets opiac&eacute;s, tout comme l'h&eacute;ro&iuml;ne et la morphine.<\/p>\n\n\n\n<p>Selon le Dr Neal Barnard, pr&eacute;sident du Comit&eacute; des m&eacute;decins pour une m&eacute;decine responsable (PCRM)&nbsp;:<\/p>\n\n\n\n<blockquote class=\"wp-block-quote\"><p>&laquo;&nbsp;Puisque le fromage est transform&eacute; pour exprimer tout le liquide, c'est une source incroyable de casomorphines. Pour ainsi dire, c'est du crack laitier. En d'autres termes, le fromage est un concentr&eacute; de casomorphines. &raquo;<\/p><\/blockquote>\n\n\n\n<p>Ah&nbsp;! Cela explique l'effet de ce plaisir accentu&eacute;&nbsp;!<\/p>\n\n\n\n<h2>Tombe amoureuse du &laquo;&nbsp;fromage&nbsp;&raquo; encore une fois<\/h2>\n\n\n\n<p>J&rsquo;en conviens. Les fromages aux noix ne seront jamais comparables &agrave; de vrais fromages laitiers.<\/p>\n\n\n\n<p>Mais les saveurs des fromages aux noix sont tout aussi sensuelles.<\/p>\n\n\n\n<p>Et ce qui est g&eacute;nial avec les fromages aux noix, c'est que tu peux cr&eacute;er une myriade de vari&eacute;t&eacute;s. Cela d&eacute;pend des noix choisies&nbsp;: amandes, noix de cajou, noix de macadamia, noisettes (pour une saveur plus sucr&eacute;e)&hellip; Pourvu qu'elles ont une teneur &eacute;lev&eacute;e en mati&egrave;res grasses.<\/p>\n\n\n\n<p>Dans cette recette, je voulais recr&eacute;er une sorte de ricotta.<\/p>\n\n\n\n<p>J'ai donc utilis&eacute; des amandes pour reproduire la m&ecirc;me couleur blanche. Pour cela, j'ai d&ucirc; les peler.<\/p>\n\n\n\n<p>Oh, la vache&nbsp;! Cela m'a fait remonter &agrave; l'&eacute;poque o&ugrave; j'ai commenc&eacute; &agrave; suivre l&rsquo;alimentation crue. Cela m'a rappel&eacute; la douleur que je ressentais la premi&egrave;re fois que j'ai pr&eacute;par&eacute; du lait d'amande. Imagine&nbsp;! Je pelais toutes les amandes &agrave; l'avance.<\/p>\n\n\n\n<p>Je ne savais pas que cela ne faisait aucune diff&eacute;rence si je les pelais ou non. Je ne savais pas que cela ne changerait ni la couleur ni le go&ucirc;t du lait.<\/p>\n\n\n\n<p>Heureusement, cette fois, peler les amandes s'est fait sans effort.<\/p>\n\n\n\n<p>Une fois tremp&eacute;es ou blanchies, tu peux retirer la peau des amandes tr&egrave;s facilement.<\/p>\n\n\n\n<p>La recette traditionnelle de ricotta contient du jus de citron. Je l'ai donc conserv&eacute; dans ma version de fromage sans produits laitiers pour le rendre acidul&eacute;, ce qui r&eacute;sulte naturellement du processus de fermentation. Puis, comme tous les fromages sont sal&eacute;s, j'ai ajout&eacute; un peu de sel aussi, et pour lui donner du go&ucirc;t, j'ai ajout&eacute; de l'ail.<\/p>\n\n\n\n<p>En bref, faire cette ricotta sans lactose &agrave; base d&rsquo;amandes est tr&egrave;s simple.<\/p>\n\n\n\n<p>&Eacute;goutte simplement un m&eacute;lange d'amande cr&eacute;meux, pr&eacute;alablement trait&eacute; au robot culinaire. Utilise une &eacute;tamine (ou de la gaze) et applique une l&eacute;g&egrave;re pression.<\/p>\n\n\n\n<p>Ma version est une version rapide. Pour avoir encore plus d&rsquo;&eacute;l&eacute;ments nutritifs, certains ferment le tout. Je ne l'ai pas fait. Si je l'avais voulu, j'aurais utilis&eacute; des probiotiques ou un ingr&eacute;dient ferment&eacute;, comme du Rejuvelac, une solution de grains ferment&eacute;s, ou du miso. Cela fonctionne tr&egrave;s bien pour accentuer le go&ucirc;t du fromage.<\/p>\n\n\n\n<p>Selon la texture d&eacute;sir&eacute;e, tu peux d&eacute;cider d'avoir une ricotta plus s&egrave;che ou plus humide. Cela d&eacute;pendrait du temps de d&eacute;shydratation ou de la pression appliqu&eacute;e.<\/p>\n\n\n\n<p>Une ricotta plus humide peut &ecirc;tre ajout&eacute;e aux <a href=\"https:\/\/bitingintolife.net\/fr\/facile-pizza-vegetalienne-a-la-croute-de-chou-fleur\/\">pizzas<\/a>, aux nouilles, aux lasagnes ou aux wraps, par exemple. Une ricotta plus s&egrave;che peut &ecirc;tre &eacute;miett&eacute;e en salades ou en soupes.<\/p>\n\n\n\n<p>Alors voil&agrave;&nbsp;!
