Si cuisiner l&eacute;ger ou moindrement a &eacute;t&eacute; mon activit&eacute; de pr&eacute;dilection, je ne me laisserai pas intimider par la cuisine de ma terre d&rsquo;origine (celle de mes parents, plut&ocirc;t).<\/p>\n\n\n\n<p>Car je ne te mentirai pas, la cuisine ha&iuml;tienne m&rsquo;a toujours sembl&eacute; fastidieuse.<\/p>\n\n\n\n<p>Les heures pass&eacute;es &agrave; appr&ecirc;ter les l&eacute;gumes : le chou, le navet, l&rsquo;aubergine ; la courge, les carottes, le mirliton (le chayotte) ; les pommes de terre, le manioc, le malanga ; l&rsquo;igname et la banane plantain qu&rsquo;on doit laver ensuite avec le citron de sorte qu&rsquo;ils ne s'oxydent pas rapidement ; les haricots verts qu&rsquo;on coupe en lamelles (&agrave; l&rsquo;&eacute;poque, coup&eacute;s au rasoir !) ; les oignons, les &eacute;chalotes fran&ccedil;aises, les aromates &agrave; &eacute;mincer&hellip;<\/p>\n\n\n\n<p>Apr&egrave;s, il y a la cuisson langoureuse de la viande, des soupes et de certains plats typiques mijot&eacute;s.<\/p>\n\n\n\n<h2 id=\"h-ah-oui-j-oubliais-il-y-a-aussi-les-haricots-secs\">Ah oui ! j&rsquo;oubliais, il y a aussi les haricots secs.<\/h2>\n\n\n\n<p>D&rsquo;habitude, il faut les faire longuement tremper. Ceci permet d&rsquo;enlever les agents d&eacute;clencheurs des rel&acirc;chements pas sexy de pouette ou de pff. Mais &ccedil;a, je pense que mes a&iuml;eux n&rsquo;en avaient aucune id&eacute;e. Ils le faisaient pour simplement acc&eacute;l&eacute;rer la cuisson.<\/p>\n\n\n\n<p>Quoique famili&egrave;re et coutumi&egrave;re, cette derni&egrave;re op&eacute;ration est plut&ocirc;t supportable. &Agrave; vrai dire, tu ne me verras jamais les manipuler avec un air dolent. Immerg&eacute;s dans l&rsquo;eau, les haricots secs ne font qu&rsquo;attendre patiemment dans un bol jusqu&rsquo;&agrave; ce qu&rsquo;on les fasse bouillir et qu&rsquo;on les m&eacute;lange &agrave; d&rsquo;autres aliments comme, disons, dans du <a href=\"https:\/\/bitingintolife.net\/fr\/salade-de-quinoa-a-la-mangue-et-aux-haricots-noirs\">quinoa<\/a> [hyperlien] ou, comme la coutume le veut dans les Cara&iuml;bes, du riz.<\/p>\n\n\n\n<p>En fait, quand j&rsquo;y pense, bah ! vu la facilit&eacute; de la t&acirc;che, je les ferais tremper n&rsquo;importe quand sans probl&egrave;me. Ah ! Mes doux, doux haricots.<\/p>\n\n\n\n<p>Si tu as une m&eacute;moire canon et fiable comme la mienne (hum, hum), il suffit de te souvenir de le faire la veille ou si tu es bien &eacute;quip&eacute;e, de les faire cuire dans une cocotte-minute.<\/p>\n\n\n\n<p>C&rsquo;est comme &ccedil;a que, je soup&ccedil;onne, la plupart des restaurants carib&eacute;ens du Costa Rica, voire les cuisiniers modernes, les pr&eacute;parent. (Petit r&eacute;sum&eacute; : pendant mes vacances sur la c&ocirc;te carib&eacute;enne du Costa Rica, j&rsquo;ai os&eacute; demander &agrave; la cheffe du resto Lidia&rsquo;s Place de me donner un cours de cuisine, ce qu&rsquo;<a href=\"http:\/\/bitingintolife.net\/fr\/costa-rica-et-riz-aux-haricots-a-la-caribeenne-ii\/\">elle avait gentiment accept&eacute;<\/a>.)<\/p>\n\n\n\n<p>Chose certaine,&nbsp;<a href=\"https:\/\/bitingintolife.net\/fr\/on-costa-rica-and-caribbean-rice-and-beans-iii\/\">Lidia Palmer les pr&eacute;pare ainsi<\/a>&nbsp; avant de les glisser dans le riz.<\/p>\n\n\n\n<h2 id=\"h-en-tout-cas-on-ne-se-lasse-jamais-de-ce-plat-typique\">En tout cas, on ne se lasse jamais de ce plat typique.<\/h2>\n\n\n\n<p>Des haricots rouges dans du riz, j&rsquo;en ai mang&eacute; pratiquement tous les jours pendant mes vacances. C&rsquo;est ainsi que cela m&rsquo;a vivement rappel&eacute; mes racines antillaises, les moments o&ugrave; ma m&egrave;re nous en servait. Jusqu&rsquo;&agrave; pr&eacute;sent, elle en pr&eacute;pare des pots pour toute la famille, au cas o&ugrave; la flemmardise de cuisiner s&rsquo;emparerait de moi. Heureusement pour moi, ce sont mes plats de secours.<\/p>\n\n\n\n<p>Et heureusement pour mon petit homme, il en raffole. Si dans le pays de mes a&iuml;eux on appelle ce plat en cr&eacute;ole&nbsp;<em>di ri ak pwa col&eacute;<\/em>&nbsp;, en Am&eacute;rique centrale, on dit&nbsp;<em>Rice and Beans<\/em>&nbsp;en anglais. Pas&nbsp;<em>arroz con pintos<\/em>&nbsp;en espagnol, mais bien&nbsp;<em>Rice and Beans<\/em>.<\/p>\n\n\n\n<p>Les&nbsp;<em>Costaricanos<\/em>&nbsp;le pr&eacute;parent comme nous, les&nbsp;<em>Haitianos<\/em>, &agrave; la seule diff&eacute;rence qu&rsquo;ils ajoutent du lait de coco &mdash; ce que certaines r&eacute;gions en Ha&iuml;ti font aussi, mais pas typiquement.<\/p>\n\n\n\n<p>Et moi, eh ben, je n&rsquo;en pr&eacute;pare pratiquement jamais. Mais gr&acirc;ce &agrave; mon s&eacute;jour, j&rsquo;ai &eacute;t&eacute; inspir&eacute;e d&rsquo;en pr&eacute;parer &agrave; mon retour &agrave; Montr&eacute;al pour me rem&eacute;morer mes moments dans le Sud et de mon enfance.<\/p>\n\n\n\n<p>Mais je l&rsquo;ai cuisin&eacute; &agrave; ma mani&egrave;re.<\/p>\n\n\n\n<p>Mon riz r&eacute;unit une combinaison de la recette d&rsquo;origine jama&iuml;caine et d&rsquo;&eacute;pices ha&iuml;tiennes. Il comprend le lait de noix de coco avec les clous de girofle. Aussi, j&rsquo;ai ajout&eacute; de la p&acirc;te tomate, comme font certains Ha&iuml;tiens, mais c&rsquo;est vraiment facultatif (ma famille m&rsquo;enverrait en enfer pour cet ajout). C&rsquo;&eacute;tait pour simuler la couleur orang&eacute;e observ&eacute;e pendant mon cours de cuisine priv&eacute; au Costa Rica.<\/p>\n\n\n\n<p>J&rsquo;ai vraiment jou&eacute; avec les ingr&eacute;dients pour apporter plus de saveurs et apr&egrave;s, quelques essais, mon petit et moi avons d&eacute;termin&eacute; que l&rsquo;ajout d&rsquo;un cube de bouillon (naturel) rehaussait vraiment le go&ucirc;t. J&rsquo;ai utilis&eacute; des oignons rouges, car ils ont plus de go&ucirc;t que les oignons blancs. Plus petits que les oignons typiques, les &eacute;chalotes sont utilis&eacute;s pour donner un go&ucirc;t plus doux ou plus sucr&eacute;.<\/p>\n\n\n\n<p>Et j&rsquo;ai obtenu un r&eacute;sultat tr&egrave;s satisfaisant. Aujourd&rsquo;hui, il partagerait aussi bien l&rsquo;assiette avec du tofu ou du tempeh bien assaisonn&eacute;s et &eacute;pic&eacute;s.&nbsp;<\/p>\n\n\n\n<p>Les assaisonnements et les aromates donnent &agrave; ce riz son go&ucirc;t unique. Prends du riz &agrave; long grain et non basmati. Il sera plus ferme (riz basmati dans la photo). L&rsquo;ajout du piment bouc le fossilise dans la cuisine de type carib&eacute;enne. Attention : celui-l&agrave; se trouve presque &agrave; l'extr&eacute;mit&eacute; de l&rsquo;&eacute;chelle en chaleur de Scoville. Traduction : il est extr&ecirc;mement piquant ! Petit et trapu, il fait partie des piments forts les plus piquants au monde. Il y en a de couleur orange, rouge ou vert, et leur chaleur est principalement retrouv&eacute;e dans les graines, alors il faut les manipuler avec soin. Normalement, on ne met pas de p&acirc;te tomate, mais malgr&eacute; les regards condescendants des cuisiniers ha&iuml;tiens, je me suis essay&eacute;e quand m&ecirc;me. &Ccedil;a a donn&eacute; un riz plus brun que d&rsquo;habitude, mais c&rsquo;&eacute;tait tr&egrave;s savoureux.<\/p>\n\n\n\n<p>Le riz se conserve assez bien au frigo et au cong&eacute;lo, alors &ccedil;a vaut la peine d&rsquo;en pr&eacute;parer un gros lot en avance. Tu peux le manger avec une salade verte ou m&ecirc;me t&rsquo;en servir dans des burritos.<\/p>\n\n\n\n<h2 id=\"h-am-ne-les-cara-bes-vers-toi-maintenant\">Am&egrave;ne les Cara&iuml;bes vers toi maintenant !<\/h2>\n\n\n\n<p>Apporte une touche exotique dans tes repas. Il ne te faut que trois principaux ingr&eacute;dients : du riz, des haricots et du lait de noix de coco.<\/p>\n\n\n\n<p>Tu te retrouveras vite dans la chaleur des Cara&iuml;bes sans prendre l&rsquo;avion.<\/p>\n\n\n\n<p>Le lait de coco donne une saveur cr&eacute;meuse et l&eacute;g&egrave;rement sucr&eacute;e au riz doux, tandis que les &eacute;pices et le piment donnent une d&eacute;licieuse &eacute;pice au plat.<\/p>\n\n\n\n<p>Enfin, apr&egrave;s toutes ces divagations sur mon voyage, je te propose une recette bien m&eacute;rit&eacute;e.<\/p>\n\n\n\n<p>Pour les haricots, n&rsquo;oublie pas de te pr&eacute;parer d&rsquo;avance ou au pire, utilise une bo&icirc;te en conserve, faute de temps.
