La veille de No&euml;l, en plus. Tr&egrave;s lourd, quoi.<\/p>\n\n\n\n<p>Pendant le temps des f&ecirc;tes, j&rsquo;ai &laquo; f&ecirc;t&eacute; &raquo; la grande soir&eacute;e de No&euml;l dans la famille de mon mec comme un observateur qui regarde des poissons se d&eacute;placer dans un aquarium. Je suis du genre &agrave; bouger mes hanches comme une d&eacute;cha&icirc;n&eacute;e sur du bon rythme musical, mais l&agrave;, elles &eacute;taient mises plus qu&rsquo;en cong&eacute;.&nbsp;<\/p>\n\n\n\n<p>Une semaine plus tard, je ne me voyais pas crier BONNE ANN&Eacute;E&nbsp;!!!, lunettes 2020 sur le bout du nez, verre de champagne dans une main, p&eacute;tard dans l&rsquo;autre avec des confettis dor&eacute;s me tombant sur la t&ecirc;te. Bon, &agrave; vrai dire, il n&rsquo;y a jamais eu de confettis dans mon existence ni les lunettes fantaisistes d&rsquo;ailleurs (&agrave; noter pour les ann&eacute;es suivantes)<\/p>\n\n\n\n<p>Bref, je suis rest&eacute;e p&eacute;narde &agrave; la maison. J&rsquo;avais besoin de me procurer un peu de tranquillit&eacute; d&rsquo;esprit. Et c&rsquo;&eacute;tait assez difficile, je te dirais.<\/p>\n\n\n\n<p>Encore dimanche dernier, quand je me suis enfin assise en tailleur pour essayer de&nbsp;<em>m&eacute;diter&nbsp;<\/em>in my living room, on my thick woolen Berber carpet, supposed to comfort me thanks to its soft and warm weaving, tears were running down on my cheeks. I couldn't contain them. De quoi m&rsquo;aider &agrave; apaiser l&rsquo;esprit. Tout d&rsquo;un coup, j&rsquo;ai craint que je n&rsquo;arriverais plus jamais &agrave; &eacute;vacuer des pens&eacute;es vagabondes d&rsquo;elle pendant ce moment cens&eacute; m&rsquo;emplir de pl&eacute;nitude.<\/p>\n\n\n\n<p>Parfois, je me demande si je ne devrais pas bouger ce portrait pour le mettre dans la cuisine plut&ocirc;t. Car si j&rsquo;avais &agrave; associer une pi&egrave;ce &agrave; sa personnalit&eacute;, ce serait bien cet espace. Cet espace empreint de feu et de chaleur et d&rsquo;&eacute;pices et de piquant, c&rsquo;est bien comme &ccedil;a que je la d&eacute;crirais.<\/p>\n\n\n\n<p>Ah&hellip; je pense encore &agrave; ses fameuses cr&ecirc;pes qu&rsquo;elle pr&eacute;parait si bien. Et l&agrave;, j&rsquo;y pense encore, c&rsquo;est vrai, je n&rsquo;ai jamais obtenu sa recette et d&eacute;sormais, je ne l&rsquo;obtiendrai plus jamais. Un secret, un joyau perdu dans l&rsquo;oc&eacute;an.&nbsp;<\/p>\n\n\n\n<h2 id=\"h-mais-un-jour-quelque-chose-a-fait-tourner-le-vent\">Mais, un jour, quelque chose a fait tourner le vent.<\/h2>\n\n\n\n<p>Il y a quelques mois, tandis que je me promenais avec mon petit monstre pour lui acheter des BD, comme &agrave; l&rsquo;accoutum&eacute;e, je me suis arr&ecirc;t&eacute;e &agrave; la table des livres de cuisine. Un livre &agrave; la couverture sombre avec des formes claires au centre a attir&eacute; mon regard.<\/p>\n\n\n\n<p>Devant un fond de mur de lambris de bois de grange fonc&eacute;, il y avait cette brunette, v&ecirc;tue de v&ecirc;tements d&rsquo;&eacute;t&eacute; l&eacute;gers p&acirc;les, cheveux attach&eacute;s l&acirc;chement en arri&egrave;re, yeux demi-clos et riv&eacute;s vers le bas, bouche entrouverte, &eacute;paules d&eacute;couvertes et clavicules pro&eacute;minentes, bras droit repli&eacute; &ndash; depuis ma perspective &ndash;, main fig&eacute;e vers le bas avec une fraise coup&eacute;e entre les doigts. En regardant la photo, on comprend qu&rsquo;elle est cens&eacute;e la d&eacute;poser au milieu d&rsquo;autres fraises, ces fraises qui s&rsquo;affalaient confortablement sur de petits coussins en pics cr&eacute;meux couleur vert pomme, les pointes en l&rsquo;air, &agrave; la forme de chocolats Kisses.<\/p>\n\n\n\n<p>Elle assemblait une tarte aux fruits.<\/p>\n\n\n\n<p>Au-dessus de sa t&ecirc;te, on lisait le titre en grandes lettres blanches majuscules&nbsp;<em>Les Bonnes Choses<\/em>, puis juste en dessous dans une police plus petite :&nbsp;<em>Cuisine v&eacute;gane au fil du jour<\/em>. Elle avait l&rsquo;air de m&rsquo;appeler vers elle. Je pense que j&rsquo;ai entendu la note aigu&euml;, chantante et ang&eacute;lique : (non, sans blague). Et donc, je me suis approch&eacute;e d&rsquo;elle, ai saisi le livre et me suis mise &agrave; le feuilleter par curiosit&eacute;.<\/p>\n\n\n\n<p>Ma curiosit&eacute; m&rsquo;a port&eacute; fruit. En l&rsquo;espace de cinq secondes, je d&eacute;couvrais une recette de cr&ecirc;pes fines. La photo &eacute;tait convaincante.<\/p>\n\n\n\n<p>Mais pas assez pour faire confiance &agrave; l&rsquo;auteure d&rsquo;embl&eacute;e.<\/p>\n\n\n\n<p>Car tu vois, j&rsquo;ai essay&eacute; bien des recettes de cr&ecirc;pes pour en &ecirc;tre d&eacute;&ccedil;ue. Il y a de ces gens en ligne qui vantent le c&ocirc;t&eacute; ultra moelleux de la pr&eacute;paration, alors que ce n&rsquo;est pas du tout le cas.<\/p>\n\n\n\n<p>Souvent, la texture &eacute;tait aussi p&acirc;teuse qu&rsquo;une bouche s&egrave;che matinale. Fois mille. Je ne voyais pas comment quelqu&rsquo;un<\/p>\n\n\n\n<blockquote class=\"wp-block-quote\"><p>&Eacute;line Bonnin was trained in tableware from Nantes and Toulouse. She was a pastry chef in France before coming to settle in Quebec. [...] She is now a chef in Montreal [...].<\/p><\/blockquote>\n\n\n\n<p>Elle m&rsquo;avait eue &agrave; : p&acirc;tissi&egrave;re.<\/p>\n\n\n\n<p>S&rsquo;il y avait bien quelqu&rsquo;un qui devait savoir comment faire des cr&ecirc;pes fines comme celles de ma s&oelig;ur, mais version v&eacute;g&eacute;talienne, me disais-je, &ccedil;a devait &ecirc;tre elle : Fran&ccedil;aise et p&acirc;tissi&egrave;re, j&rsquo;&eacute;tais plus que convaincue.<\/p>\n\n\n\n<p>Donc, voil&agrave; que j&rsquo;&eacute;tais entr&eacute;e dans la libraire avec la seule intention d&rsquo;acheter deux livres &agrave; mon petit et que j&rsquo;en ressortais avec quatre : deux BD,&nbsp;<em>Les Bonnes Choses<\/em>&nbsp;et de la litt&eacute;rature gourmande (<em>Un Chemin des tables<\/em>&nbsp;de Maylis de Kerangal).<\/p>\n\n\n\n<h2 id=\"h-des-cr-pes-v-ganes-dignes-de-cette-appellation\">des cr&ecirc;pes v&eacute;ganes dignes de cette appellation.<\/h2>\n\n\n\n<p>J&rsquo;&eacute;tais bigrement contente d&rsquo;avoir r&eacute;ussi pour la premi&egrave;re fois des cr&ecirc;pes v&eacute;ganes fines. Je les ai montr&eacute;es en photo &agrave;&nbsp;<a href=\"https:\/\/bitingintolife.net\/fr\/high-nutrient-and-easy-pumpkin-soup\/\">ma copine Juju<\/a>, toute fi&egrave;re, et elle m&rsquo;a demand&eacute; si elles &eacute;taient sans gluten. Bon, cette recette ne l&rsquo;est pas, mais il fallait bien que je donne une chance &agrave; &Eacute;line avant de m&rsquo;aventurer dans d&rsquo;autres choses.<\/p>\n\n\n\n<p>&Agrave; y repenser, cette recette, elle ressemble beaucoup &agrave; celle de mes jours pr&eacute;v&eacute;g&eacute;taliens, &agrave; la seule diff&eacute;rence qu&rsquo;on remplace les &oelig;ufs par de la f&eacute;cule de ma&iuml;s. Pourtant, il me semble avoir d&eacute;j&agrave; essay&eacute; de faire cette simple substitution, mais peut-&ecirc;tre &eacute;tais-je trop ambitieuse en rempla&ccedil;ant la farine blanche par d&rsquo;autres types de farines telles que la farine de quinoa ou de millet. Beaucoup trop granuleuses. Je pense bien avoir aussi &eacute;chou&eacute; avec la farine de bl&eacute; entier et d&rsquo;&eacute;peautre. Va savoir ce qui a d&ucirc; se passer.<\/p>\n\n\n\n<p>M. Agr&eacute;able (le nouveau nom de mon mec pour la nouvelle d&eacute;cennie) sait faire des cr&ecirc;pes Suzette. S&rsquo;il les parfume au jus d&rsquo;orange, &Eacute;line &ndash; ouais, on est copines maintenant &ndash; le fait avec de l&rsquo;eau de fleur d&rsquo;oranger, ce qui est tout aussi agr&eacute;able.&nbsp;<\/p>\n\n\n\n<p>Franchement, ces cr&ecirc;pes sans oeufs, minces et charmantes, m&rsquo;ont d&eacute;licieusement surprise.<\/p>\n\n\n\n<p>Durant la friture, elles prennent une belle nuance d'or, et &agrave; la fin, leurs bords ext&eacute;rieurs arborent une jolie finition en dentelle et &eacute;mettent un craquement fin qui se dissipe en quelques secondes en bouche. Leur saveur est sans pr&eacute;tention et famili&egrave;re. Fra&icirc;chement sorties de la po&ecirc;le, elles sont l&eacute;g&egrave;res et juste assez moelleuses pour nous bluffer : ce sont des cr&ecirc;pes sans oeufs, souviens-toi.<\/p>\n\n\n\n<p>En tout cas, s&rsquo;il est vrai que j&rsquo;ai perdu ma petite Tany, j&rsquo;ai gagn&eacute; une recette qui me la rendra inoubliable.&nbsp;<\/p>\n\n\n\n<p>Alors, peut-&ecirc;tre, peut-&ecirc;tre durant ces moments de pr&eacute;paration et de cuisson, m&ecirc;me si ma douleur est incommensurable, je souffrirais un tantinet moins. Ce sera notre rendez-vous &agrave; toutes les deux. Ce sera notre rendez-vous rempli de ce doux moment de peine et de joie, d&rsquo;amertume et de douceur, de lourdeur et de l&eacute;g&egrave;ret&eacute;, et tout de m&ecirc;me ang&eacute;lique.<\/p>\n\n\n\n<p>[Joyeux anniversaire Papa. Verse l&rsquo;ensemble des ingr&eacute;dients liquides aux ingr&eacute;dients secs, puis m&eacute;lange le tout. Allonge ta p&acirc;te avec de l&rsquo;eau, si besoin est, puis fais tes cr&ecirc;pes. La recette originale demande &frac14; tasse de sucre, mais j&rsquo;ai r&eacute;duit la quantit&eacute; vu que le lait de riz est naturellement assez sucr&eacute;. En parlant du lait de riz, l&rsquo;auteure mentionne dans la section des ingr&eacute;dients &agrave; conna&icirc;tre d&rsquo;autres types de laits v&eacute;g&eacute;taux (alias boissons v&eacute;g&eacute;tales), comme le lait de soya, d&rsquo;amande, de coco ou d&rsquo;avoine, mais j&rsquo;ai opt&eacute; pour le lait pr&eacute;c&eacute;demment mentionn&eacute; en raison de sa texture plus liquide que les autres. Si tu es press&eacute;e, tu peux cuire les cr&ecirc;pes &agrave; l&rsquo;imm&eacute;diat, mais laisser la p&acirc;te reposer dans le frigo augmente l&rsquo;effet liant du m&eacute;lange. \n\nPour finir, la confiture de fraises ajoutent une note plus color&eacute;e. Ces fines galettes de p&acirc;te valent la peine d&rsquo;&ecirc;tre mang&eacute;es chaudes sinon elles durcissent (et encore beaucoup plus comme restes), alors gobe-les aussi vite que tu
