Pas la pr&eacute;pa.<\/p>\n\n\n\n<p>Pourquoi est-ce que &ccedil;a prends le tiers ou le quart du temps ?<\/p>\n\n\n\n<p>Le seul fait que tu ne mets pas d&rsquo;os et de cartilages r&eacute;duit consid&eacute;rablement ton temps de cuisson. De plus, tu n&rsquo;auras pas &agrave; retirer la couche de gras solide qui se forme cons&eacute;quemment en surface.&nbsp;<\/p>\n\n\n\n<p>En tout cas, il n&rsquo;y a pas que la viande qui donne go&ucirc;t. Il suffit de choisir des ingr&eacute;dients qui contiennent, ce qu&rsquo;on appelle, l&rsquo;umami.&nbsp;<\/p>\n\n\n\n<p>L&rsquo;umami, c&rsquo;est le go&ucirc;t r&eacute;sultant de l&rsquo;acide amin&eacute; L-glutamate et d&rsquo;autres encore avec des noms assez longs et si compliqu&eacute;s qu&rsquo;ils d&eacute;courageront ta langue de se mouvoir. Et on les retrouve surtout dans la viande.&nbsp;<\/p>\n\n\n\n<p>C&rsquo;est le go&ucirc;t plaisant de &laquo; bouillon &raquo; ou de &laquo; viande &raquo; avec une sensation durable, app&eacute;tissante et recouvrant toute la langue. C&rsquo;est le go&ucirc;t rond, r&eacute;confortant et rago&ucirc;tant.<\/p>\n\n\n\n<p>D&rsquo;ailleurs, cette sauce comprend un ingr&eacute;dient qui donne quasiment le m&ecirc;me rendu pour &eacute;voquer l&rsquo;umami de la viande : une saveur riche avec du corps. Lequel ? Le champignon shiitake.<\/p>\n\n\n\n<p>Sous sa forme fra&icirc;che, le champignon shiitake a une saveur <strong>riche, beurr&eacute;e et terreuse <\/strong>tout &agrave; fait diff&eacute;rente de celle des autres vari&eacute;t&eacute;s de champignons. Sous sa forme cuite, elle est <strong>fumante, bois&eacute;e et charnue<\/strong>.<\/p>\n\n\n\n<p>C&rsquo;est pourquoi cette sauce demi-glace est si joyeusement complexe. Le plus important, c&rsquo;est d&rsquo;&eacute;quilibrer les saveurs : tu dois ajouter des l&eacute;gumes qui &eacute;manent de l&eacute;gumes sucr&eacute;s, sal&eacute;s, amers, acides, piquants et savoureux (qui donnent de l&rsquo;umami). J&rsquo;ai d&eacute;cortiqu&eacute; les ingr&eacute;dients de cette recette ci-dessous pour que tu comprennes les grandes lignes. Parfois, un l&eacute;gume peut avoir un go&ucirc;t principal et un go&ucirc;t secondaire.<\/p>\n\n\n\n<p class=\"has-medium-font-size\"><strong>Sucr&eacute;<\/strong><\/p>\n\n\n\n<ul><li><strong>Carottes &ndash;<\/strong> elles ajoutent une belle touche sucr&eacute;e. Pour un go&ucirc;t plus terreux, n&rsquo;&eacute;pluche pas les carottes.<\/li><li><strong>Betteraves &ndash;<\/strong> ces bijoux rouges ajoutent une douceur terreuse et une belle couleur sombre. Pour avoir plus de tanins, lave-les bien et ne les &eacute;pluche pas.<\/li><\/ul>\n\n\n\n<p class=\"has-medium-font-size\"><strong>Sal&eacute;<\/strong><\/p>\n\n\n\n<ul><li><strong>C&eacute;leri &ndash;<\/strong> c&rsquo;est du sel naturel.<\/li><li><strong>C&eacute;leri-rave &ndash;<\/strong> ingr&eacute;dient facultatif. &Ccedil;a apporte encore plus de sel naturel et une note terreuse.<\/li><li><strong>Kombu &ndash;<\/strong> en lani&egrave;res, il sert une double fonction : il apporte le go&ucirc;t sal&eacute; en m&ecirc;me temps que l&rsquo;umami.<\/li><\/ul>\n\n\n\n<p class=\"has-medium-font-size\"><strong>Amer<\/strong><\/p>\n\n\n\n<ul><li>D&rsquo;habitude, on met des aromates (laurier, thym, persil). Mais, tu peux faire des folies avec d&rsquo;autres l&eacute;gumes amers, tels que<strong> l&rsquo;aubergine, le brocoli, le chou-fleur<\/strong>, le chou fris&eacute;, le chou ou quelque chose de sombre, vert et feuillu. D&rsquo;ailleurs, lorsque ces l&eacute;gumes sont r&ocirc;tis, ils ajoutent une belle note am&egrave;re.&nbsp;<\/li><\/ul>\n\n\n\n<p class=\"has-medium-font-size\"><strong>Acide<\/strong><\/p>\n\n\n\n<ul><li>Tomates ou <strong>p&acirc;te tomate &ndash;<\/strong> Les tomates donnent &eacute;galement de l'umami. Selon les tomates, elles apportent un peu d'acide citrique et\/ou un go&ucirc;t sucr&eacute; &agrave; la sauce finale. La p&acirc;te tomate offre quant &agrave; elle un go&ucirc;t plus concentr&eacute;.<\/li><li><strong>Vin blanc &ndash;<\/strong> il intensifiera la saveur et l'ar&ocirc;me de la sauce et lui donnera une saveur fruit&eacute;e. L'alcool dans le vin s'&eacute;vapore pendant la cuisson des aliments, et seule la saveur restera. Pour plus de richesse et de robustesse, utilisez plut&ocirc;t du vin rouge.<\/li><\/ul>\n\n\n\n<p class=\"has-medium-font-size\"><strong>Piquant (consid&eacute;r&eacute; comme un go&ucirc;t)<\/strong><\/p>\n\n\n\n<ul><li><strong>Oignons rouges &ndash;<\/strong> Ils offrent le c&ocirc;t&eacute; piquant et, lorsqu&rsquo;ils sont d&eacute;coup&eacute;s finement, une note sucr&eacute;e au m&eacute;lange. Ils apportent aussi un go&ucirc;t relev&eacute;. Les oignons rouges sont plus go&ucirc;teux que les jaunes.<\/li><li><strong>Ail &ndash;<\/strong> C&rsquo;est une pierre angulaire de nombreuses sauces. L'ail ajoute son propre sel et sa saveur piquante.<\/li><\/ul>\n\n\n\n<p class=\"has-medium-font-size\"><strong>Umami<\/strong><\/p>\n\n\n\n<ul><li><strong>Champignons Shiitake frais &ndash;<\/strong> Certainement l&rsquo;ingr&eacute;dient essentiel. Ils renforcent l'umami dans la sauce finale et lui donne un tr&egrave;s bon go&ucirc;t rond, terreux et charnu. Les d&eacute;shydrat&eacute;s ont un go&ucirc;t beaucoup plus prononc&eacute;s que les frais, alors si tu utilise ceux-l&agrave;, r&eacute;duis la quantit&eacute; de moiti&eacute;. Des champignons portobello ou autres champignons go&ucirc;teux feront l&rsquo;affaire aussi.<\/li><\/ul>\n\n\n\n<h2 id=\"comment-la-faire-etape-par-etape\"   >Comment la faire &eacute;tape par &eacute;tape<\/h2>\n\n\n\n<p>Je ne vais pas mentir. Il y a beaucoup de d&eacute;coupage impliqu&eacute;. Mais une fois que c'est fait, la navigation est fluide. <\/p>\n\n\n\n<p>Dans l'ensemble, vous prenez beaucoup de l&eacute;gumes, les coupez en lani&egrave;res, et les r&ocirc;tissez au four jusqu'&agrave; ce qu'ils brunissent &#9312; &#9313;. La <a href=\"https:\/\/www.amazon.ca\/gp\/product\/B01D2C0AGG\/ref=as_li_qf_asin_il_tl?ie=UTF8&amp;tag=bitingintolife-20&amp;creative=330641&amp;linkCode=as2&amp;creativeASIN=B01D2C0AGG&amp;linkId=79104537c24ab68a79b3b21b1a9607e0\">mandoline<\/a> est ton meilleur outil pour &ccedil;a, mais &ccedil;a ne t&rsquo;emp&ecirc;che surtout pas de le faire &agrave; la main.<\/p>\n\n\n\n<p>Si vous comptez utiliser la mandoline, voici quelques astuces pour acc&eacute;l&eacute;rer le processus :<\/p>\n\n\n\n<ul><li>Tranche plusieurs carottes ou branches de c&eacute;leri ensemble&nbsp;;<\/li><li>Tranche la t&ecirc;te d'ail enti&egrave;re. M&ecirc;me si des peaux d'ail entrent dans le m&eacute;lange, tu finiras par n'exprimer que le liquide.<\/li><\/ul>\n\n\n\n<p class=\"has-background\" style=\"background-color:#e2ada9\">Avertissement : &Agrave; moins que tu veuilles obstin&eacute;ment revenir &agrave; la recette traditionnelle pour &eacute;paissir ta sauce avec une composante inanim&eacute;e d&rsquo;un &ecirc;tre vivant, utilise le protecteur &agrave; main avec la mandoline. Ceci t&rsquo;emp&ecirc;chera de trancher en lamelles ton pouce.<\/p>\n\n\n\n<p class=\"has-medium-font-size\"><strong>Adoucis le go&ucirc;t de la p&acirc;te tomate&nbsp;<\/strong><\/p>\n\n\n\n<p>Si le temps te le permet, chauffe la p&acirc;te tomate un peu pour r&eacute;duire son c&ocirc;t&eacute; acide. Par exemple, tu peux &eacute;galement ajouter un peu de bicarbonate de soude (ratio : 1 tasse de p&acirc;te tomate pour un quart de tasse de bicarbonate de soude).<\/p>\n\n\n\n<p class=\"has-medium-font-size\"><strong>Laisse mijoter doucement, &agrave; d&eacute;couvert<\/strong><\/p>\n\n\n\n<p>Pour obtenir une bonne demi-glace de l&eacute;gumes, utilise les m&ecirc;mes astuces de pr&eacute;paration d&rsquo;un fond &agrave; base de viande : fais-la mijoter doucement.&nbsp;<\/p>\n\n\n\n<p>Mais attention ! &Eacute;vite de la laisser bouillir. Pourquoi ? Apparemment, l&rsquo;agitation caus&eacute;e par l&rsquo;&eacute;bullition emp&ecirc;che les particules de remonter &agrave; la surface.&nbsp;<\/p>\n\n\n\n<p class=\"has-medium-font-size\"><strong>Filtre avec des mailles fines<\/strong><\/p>\n\n\n\n<p>J&rsquo;ai utilis&eacute; mon sac &agrave; filtre de boisson &agrave; base d&rsquo;ol&eacute;agineux pour exprimer le liquide au maximum. (Laisse refroidir le m&eacute;lange pour ne pas cuire tes mains sur le sac). Si tu n&rsquo;as pas cet accessoire, un tamis &agrave; mailles fines (un chinois) fera l&rsquo;affaire.&nbsp;<\/p>\n\n\n\n<p class=\"has-medium-font-size\"><strong>Mouline la pr&eacute;paration avant de la filtrer.<\/strong><\/p>\n\n\n\n<p>Ceci te permettra de tirer un maximum de saveur. Assure-toi qu&rsquo;il y ait plus de l&eacute;gumes sal&eacute;s que sucr&eacute;s, sinon la sauce risque d&rsquo;&ecirc;tre sirupeuse et &eacute;c&oelig;urante.<\/li>\n<li><strong>Les champignons :<\/strong> les shiitake donnent vraiment du go&ucirc;t. Les champignons d&eacute;shydrat&eacute;s ont un go&ucirc;t beaucoup plus prononc&eacute;s que les frais, alors si tu utilises ceux-l&agrave;, r&eacute;duis la quantit&eacute; de moiti&eacute; et fais-les tremper dans de l&rsquo;eau pour les r&eacute;hydrater. Si tu aimes moins cette sorte de champignons, remplace-les par des champignons blancs ou caf&eacute; ou quatre champignons portobello.<\/li>\n<li><strong>La p&acirc;te tomate<\/strong> fonctionne bien ici pour fournir une concentration de saveur de tomate. Elle peut agir en tant qu&rsquo;&eacute;paississant aussi une fois le liquide filtr&eacute;. Par contre, &ccedil;a changera le go&ucirc;t (plus d&rsquo;acide et plus d&rsquo;umami). Elle peut &eacute;galement &ecirc;tre remplac&eacute;e par de la Passata. Fais sauter la p&acirc;te de tomate pour adoucir son go&ucirc;t.<\/li>\n<li><strong>Le sel :<\/strong> il n&rsquo;y a peu de sel dans cette recette, mais ajoutes-en si tu ne mets pas assez
