La fin de l&rsquo;&eacute;t&eacute; appelle le ma&iuml;s, les p&ecirc;ches, les tomates&hellip;<\/p>\n\n\n\n<p>En ce moment, on parle de prunes. Et que faire avec celles-ci&thinsp;? Un dessert aux prunes bien s&ucirc;r&thinsp;! Pour l&rsquo;heure, le crumble aux prunes a re&ccedil;u toute mon attention. Je suis plut&ocirc;t une fille qui pr&eacute;f&egrave;re le sal&eacute;, mais j&rsquo;ai &eacute;t&eacute; bien friande avec ce met d&eacute;licat.<\/p>\n\n\n\n<p>Mon crumble aux prunes et au gingembre est la version v&eacute;g&eacute;talis&eacute;e de <a href=\"https:\/\/translate.google.com\/translate?hl=en&amp;sl=auto&amp;tl=fr&amp;u=https%3A%2F%2Fen.wikipedia.org%2Fwiki%2FMarian_Burros\">Marian Burros, auteure de livres de cuisine et chroniqueuse culinaire pour le New York Times, poste occup&eacute; jusqu&rsquo;en 1983<\/a>. Elle est une excellente r&eacute;plique. <\/p>\n\n\n\n<p>Je l&rsquo;ai maintenant faite trois fois, et mes convives n&rsquo;ont aucunement &eacute;t&eacute; d&eacute;&ccedil;us.&nbsp;Le go&ucirc;t des prunes en confiture ne semble pas d&eacute;plaire le palais des rares personnes qui raffolent de saveurs surettes.<\/p>\n\n\n\n<p>Honn&ecirc;tement, si ton dessert ne comprend pas exclusivement des aliments entiers, on ne peut pas dire qu&rsquo;il est sain &agrave; 100 %. Je ne te mentirai pas en te disant que celui-l&agrave; l&rsquo;est. Il contient tout de m&ecirc;me beaucoup de sucre ajout&eacute;.<\/p>\n\n\n\n<p>Par contre, je te dirai que je me suis &eacute;vertu&eacute;e &agrave; le rendre un tantinet plus sain. En effet, il comporte de la farine de bl&eacute; entier et d&rsquo;amande au lieu de la farine blanche et du sucre de cocotier au lieu du sucre blanc. De toute fa&ccedil;on, les prunes composent la majorit&eacute; du plat, alors on ne va pas trop se sentir mal d&rsquo;avaler tout ce sucre.<\/p>\n\n\n\n<p>Ce dessert se fait en deux, trois mouvements.<\/p>\n\n\n\n<h2 id=\"quest-ce-quon-met-dedans\"   >Qu&rsquo;est-ce qu&rsquo;on met dedans ?<\/h2>\n\n\n\n<p>Pour confectionner un crumble sans &oelig;ufs, on les enl&egrave;vera tout simplement. C&rsquo;est cette sorte qu&rsquo;on transforme en pruneaux (prunes s&egrave;ches).<\/figcaption><\/figure>\n\n\n\n<ul><li><strong><strong>Prunes &ndash;<\/strong><\/strong> j&rsquo;ai choisi des prunes italiennes fra&icirc;ches plut&ocirc;t que la vari&eacute;t&eacute; japonaise, car leur texture dense est pleine de saveurs sucr&eacute;es, riches et complexes.<\/li><li><strong>Substitut d&rsquo;&oelig;uf&nbsp;&ndash;<\/strong> ceci est facultatif. La recette originale comprend un &oelig;uf battu, et j&rsquo;ai voulu reproduire le m&ecirc;me effet en ajoutant un ingr&eacute;dient, appel&eacute; <em>Egg Replacer<\/em>, m&eacute;lang&eacute; &agrave; un peu d&rsquo;eau. <\/li><li><strong>Beurre non laitier &ndash; <\/strong>j'ai utilis&eacute; la marque Earth&rsquo;s Balance (pas mon choix de pr&eacute;dilection, car elle contient de l'huile de palme). Un autre choix serait <em>Miyoko&rsquo;s Creamery Cultured Vegan<\/em> &mdash; un produit californien dont la saveur est &eacute;galement hallucinante. <\/li><li><strong>Sucre de cocotier &ndash;<\/strong> la recette originale appelait du sucre granul&eacute; blanc. J&rsquo;ai plut&ocirc;t utilis&eacute; ce type de sucre, un remplacement direct de ce dernier. Sa couleur brun fonc&eacute; et sa saveur caramel, noisette et terreuse ont un impact gustatif, mais cela complimente les prunes.<\/li><\/ul>\n\n\n\n<div class=\"is-layout-flow wp-block-group has-background\" style=\"background-color:#e8e3d8\"><div class=\"wp-block-group__inner-container\">\n<p><strong>Remarque :<\/strong> cet &eacute;dulcorant granul&eacute; et non raffin&eacute; est consid&eacute;r&eacute; comme &eacute;tant &laquo;&thinsp;plus sain&thinsp;&raquo; que le sucre blanc. Il est aussi consid&eacute;r&eacute; comme &eacute;tant &laquo;&nbsp;un peu plus sain&thinsp;&raquo; que le sucre de canne, car le processus de conversion retient plus de nutriments, y compris une fibre appel&eacute;e inuline, <a href=\"https:\/\/translate.google.com\/translate?hl=en&amp;sl=auto&amp;tl=fr&amp;u=https%3A%2F%2Fwww.ncbi.nlm.nih.gov%2Fpmc%2Farticles%2FPMC3638225%2F&amp;sandbox=1\">qui ralentit l&rsquo;absorption du sucre dans la circulation sanguine<\/a>.<\/p>\n\n\n\n<p>Cela permet un index glyc&eacute;mique plus bas par rapport &agrave; certains autres sucres. La teneur en calories est la m&ecirc;me que celle du sucre granul&eacute;, &agrave; savoir environ 4 calories par gramme.<\/p>\n<\/div><\/div>\n\n\n\n<ul><li><strong>Sucre Muscovado &ndash;<\/strong> je l&rsquo;ai utilis&eacute; pour donner une saveur plus profonde et complexe, avec des notes de caramel et un arri&egrave;re-go&ucirc;t l&eacute;g&egrave;rement amer. C&rsquo;est du sucre de canne artisanal et non raffin&eacute; qui contient de la m&eacute;lasse naturelle. Il a une riche couleur brune, une texture moelleuse et un go&ucirc;t de caramel. <a href=\"https:\/\/translate.google.com\/translate?hl=en&amp;sl=auto&amp;tl=fr&amp;u=https%3A%2F%2Fwww.webmd.com%2Fdiet%2Fwhat-to-know-about-muscovado-sugar%231\">Celui-ci contient le m&ecirc;me nombre de calories que le sucre ordinaire, mais fournit &eacute;galement des traces de min&eacute;raux comme le magn&eacute;sium, le potassium, le calcium et le fer en raison de sa teneur en m&eacute;lasse.<\/a><\/li><\/ul>\n\n\n\n<p class=\"has-background\" style=\"background-color:#e8e3d8\"><strong>Remarque :<\/strong> pourquoi ces guillemets autour de <em>plus sain <\/em>ou <em>un peu plus sain<\/em>&thinsp;? Soyons clairs, AUCUN SUCRE n&rsquo;est meilleur pour la sant&eacute; qu&rsquo;un autre. Mais quitte &agrave; se droguer de sucre, autant le faire avec un minimum de traitement et d&rsquo;oligo-&eacute;l&eacute;ments.<\/p>\n\n\n\n<ul><li><strong>Gingembre confit &ndash;<\/strong> &ccedil;a apporte un jeu de textures dans la compote, un tantinet de r&eacute;sistance &agrave; la dent.<\/li><\/ul>\n\n\n<a href=\"#wprm-recipe-container-89338\" data-recipe=\"89338\" style=\"color: #333333;\" class=\"wprm-recipe-jump wprm-recipe-link wprm-jump-to-recipe-shortcode wprm-block-text-normal\">Voir la fiche technique pour conna&icirc;tre les quantit&eacute;s exactes.<\/a>\n\n\n<div class=\"is-layout-flow wp-block-group feast-box-secondary\"><div class=\"wp-block-group__inner-container\">\n<h3>De simples substitutions et ajouts<\/h3>\n\n\n\n<ul><li><strong>Acc&eacute;l&egrave;re la cuisson &ndash;<\/strong> utilise de la farine blanche. Celle-ci cuit plus vite et donc est couramment utilis&eacute;e pour le crumble. Mais elle est d&eacute;pourvue d&rsquo;&eacute;l&eacute;ments nutritifs. <\/li><li><strong>Rends-le sans gluten &ndash;<\/strong> utilise de la farine sans gluten ou de noix de coco pour faire un crumble aux prunes sans gluten.<\/li><li><strong>Substitut d&rsquo;&oelig;uf&nbsp;&ndash;<\/strong> tu peux &eacute;galement utiliser de la f&eacute;cule de ma&iuml;s ou de pomme de terre. Si tu ne l&rsquo;ajoutes pas, &ccedil;a ne changera pas grand-chose &agrave; la garniture &eacute;miett&eacute;e.<\/li><li><strong>Beurre non laitier &ndash;<\/strong> &agrave; d&eacute;faut d&rsquo;avoir les marques ci-haut mentionn&eacute;es, opte pour de la margarine qui s&rsquo;y pr&ecirc;te bien aussi.<\/li><li><strong>Transforme-le en croustillant de prunes pour le petit d&eacute;jeuner (ou pas) &ndash; <\/strong>remplace la farine par des flocons d'avoine et ajoute des noix (approche-toi ; j'ai un autre secret &agrave; partager avec toi : tu doperas la densit&eacute;e nutritionnelle du m&ecirc;me coup).<\/li><\/ul>\n<\/div><\/div>\n\n\n\n<h2 id=\"comment-faire-ce-plat-etape-par-etape\"   >Comment faire ce plat &eacute;tape par &eacute;tape<\/h2>\n\n\n\n<p>Avant d'entrer dans le plat &agrave; cuisson, les prunes sont simplement coup&eacute;es en deux et d&eacute;noyaut&eacute;es &#9312;. Elle sont ensuite remu&eacute;es avec une tr&egrave;s petite quantit&eacute; de cassonade, encore de plus petites quantit&eacute;s de gingembre moulu et de cannelle, juste assez de farine pour donner du corps &agrave; leur jus. En effet, tu ne pourras pas dire que ton crumble est trop mouill&eacute;, farineux ou pas assez &eacute;miett&eacute;.<\/p>\n\n\n\n<p class=\"has-medium-font-size\"><strong>Choisis le plat de cuisson de taille appropri&eacute;e<\/strong><\/p>\n\n\n\n<p>Comme pour tous les desserts de type crumble ou cobbler, tout le monde veut un peu de garniture croustillante ou friable &agrave; chaque bouch&eacute;e de garniture aux fruits. Si tu utilises un plat trop profond, tu vas probablement cuire quelque chose qui ressemble &agrave; un pot de confiture de fruits avec une fine couche de cro&ucirc;te sur le dessus. <\/p>\n\n\n\n<p>Une fois la garniture retir&eacute;e, tu te retrouveras avec beaucoup de fruits sirupeux dans le fond du plat de cuisson. Pour de jolies pr&eacute;sentations, le plat de cuisson de taille appropri&eacute;e garantira une bonne portion de garniture croustillante avec la garniture aux fruits.<\/p>\n\n\n\n<p class=\"has-medium-font-size\"><strong>Ne l&eacute;sine pas sur le beurre (non laitier, hein)<\/strong><\/p>\n\n\n\n<p>Le beurre, qui encourage &agrave; la fois le brunissement et le croustillant, est l&rsquo;ingr&eacute;dient magique pour obtenir une garniture parfaite.<\/p>\n\n\n\n<p>Si tu ne mets pas assez de beurre, ta garniture sera un amas sec et farineux. Si tu mets trop de beurre, elle deviendra une masse sans forme grasse.<\/p>\n\n\n\n<p>Certaines recettes te demanderont de couper du beurre froid et d'en ajouter aux ingr&eacute;dients secs. Cela donne des morceaux de la taille d&rsquo;un pois qui sont saupoudr&eacute;s sur la garniture aux fruits chauds.
