Tu n&rsquo;auras pas &agrave; te sentir mal de rester planqu&eacute;&middot;e chez toi &agrave; humer ses ar&ocirc;mes capiteux.<\/p>\n\n\n\n<p>Si tu ne peux pas te passer du pain, je suis d&eacute;sol&eacute;e pour toi, tu verras que la meilleure chose depuis le pain tranch&eacute; est un morceau de pain moelleux comme un coussin dans un bol de soupe &agrave; la tomate.<\/p>\n\n\n\n<p>J&rsquo;adore ce plat pour sa simplicit&eacute;, car il comporte autour de cinq ingr&eacute;dients. En tout cas, j&rsquo;ai lu quelque part qu&rsquo;il ne fallait pas plaisanter avec les Italiens et leur cuisine traditionnelle. Ils ne tol&egrave;rent pas les &eacute;carts quant &agrave; la pr&eacute;pa de cette soupe. Des &eacute;carts comme ajouter n&rsquo;importe quel pain non toscan, toutes herbes autres que le basilic doux ou g&eacute;nois, de l&rsquo;huile d&rsquo;olive bas de gamme, des tomates en conserve ou tout fromage.<\/p>\n\n\n\n<p>Attends un peu&thinsp;! On a un plat 100 % v&eacute;g&eacute;tal ici&thinsp;! &#128588;<\/p>\n\n\n\n<p>Peuple toscan, je vous comprends. &Ccedil;a me rappelle mon fondamentalisme gastronomique &agrave; l&rsquo;&eacute;poque o&ugrave; j&rsquo;&eacute;tais vigoureusement oppos&eacute;e &agrave; la nourriture cuite et o&ugrave; l&rsquo;on me surnommait l&rsquo;ayatollah de la bouffe. J&rsquo;entends ce rejet de la modernit&eacute;. J&rsquo;entends ce plaidoyer d&rsquo;une stricte conformit&eacute; &agrave; la recette authentique. C&rsquo;est pourquoi je ne vous dirai pas que j&rsquo;ai d&eacute;rog&eacute; &agrave; la tradition en ajoutant dans ma soupe primo, du pain frais et secundo, du pain au levain plut&ocirc;t que du pain toscan.<\/p>\n\n\n\n<p>Non, vous n&rsquo;en saurez rien. Pour faire une pappa al pomodoro authentique, il faut une vari&eacute;t&eacute; de tomates particuli&egrave;res, appel&eacute;es <em>pisanelli<\/em> ou <em>costoluto fiorentino<\/em>. Issues de diverses tomates italiennes anciennes, elles ont une forme distincte aplatie et sont fortement nervur&eacute;es (c&ocirc;tel&eacute;es).<\/li><\/ul>\n\n\n\n<p>&Eacute;videmment, il n&rsquo;est pas toujours facile de d&eacute;nicher cette vari&eacute;t&eacute;, m&ecirc;me en Italie. En l&rsquo;occurrence, tu peux te servir de tomates en conserve San Marzano trouv&eacute;es dans les &eacute;piceries sp&eacute;cialis&eacute;es. Elles sont consid&eacute;r&eacute;es comme les meilleures du genre au monde par de nombreux chefs. Si tu souhaites en utiliser des fra&icirc;ches, les Roma sont une bonne option. Elles proviennent d&rsquo;un croisement entre une San Marzano et deux autres vari&eacute;t&eacute;s de tomates.<\/p>\n\n\n\n<p class=\"has-background\" style=\"background-color:#e2ada9\">Attention&thinsp;! Je ne sais pas si cette pratique est courante en Am&eacute;rique du Nord, mais en France, il y a tout un scandale de fausses tomates c&oelig;ur de b&oelig;uf. Des contrefa&ccedil;ons joliment c&ocirc;tel&eacute;es seraient vendues sous le nom de &laquo;&thinsp;tomate de type c&oelig;ur de b&oelig;uf&thinsp;&raquo; et &agrave; un prix 30 % plus cher que les tomates ordinaires, qui plus est&thinsp;! Selon l&rsquo;Association nationale de consommateurs et usagers, les grandes enseignes seraient les instigatrices d&rsquo;un &eacute;tiquetage trompeur pour entretenir une confusion aupr&egrave;s des consommateurs et profiter des prix &eacute;lev&eacute;s.<\/p>\n\n\n\n<ul><li><strong>Pain &ndash;<\/strong> la recette authentique appelle du pain rassis, mais j&rsquo;ai utilis&eacute; du pain frais (chut&thinsp;!). Le pain s&eacute;ch&eacute; fonctionne tr&egrave;s bien ici aussi. Si l&rsquo;on veut se rapprocher de la recette authentique, ce dernier est en fait mieux que le pain rassis (ne dites pas &ccedil;a aux durs de durs).&nbsp;<\/li><\/ul>\n\n\n\n<p>Si la diff&eacute;rence entre les deux semble insignifiante, il peut &ecirc;tre utile de savoir que le rassissement et le s&eacute;chage sont deux processus diff&eacute;rents, bien que souvent simultan&eacute;s : le rassissement fait r&eacute;f&eacute;rence &agrave; la recristallisation de l&rsquo;amidon du pain, tandis que le s&eacute;chage d&eacute;crit une perte d&rsquo;humidit&eacute; par &eacute;vaporation. Le rassissement conduit &agrave; un pain dur et ferme, tandis que le s&eacute;chage (en l&rsquo;absence de rassissement) conduit &agrave; une texture l&eacute;g&egrave;re et croquante, comme celle d&rsquo;un cro&ucirc;ton frais.<\/p>\n\n\n\n<ul><li><strong>Oignons &ndash;<\/strong> ils ne figurent pas dans la recette authentique, mais ici, ils y sont pour ajouter de la douceur et compenser l&rsquo;acidit&eacute; naturelle des tomates. Je mets presque toujours des oignons rouges dans mes recettes, car leur couleur vive t&eacute;moigne de leur puissance en antioxydants.<\/li><li><strong>Ail &ndash;<\/strong> on en met pour relever le go&ucirc;t.<\/li><li><strong>Huile d&rsquo;olive<\/strong> &ndash; elle doit &ecirc;tre extra-vierge et de bonne qualit&eacute;. Et si l&rsquo;on voulait s&rsquo;en tenir &agrave; la recette authentique, toscane. Avant de servir la soupe, verse les derni&egrave;res gouttes crues et tu passeras &agrave; un niveau sup&eacute;rieur&thinsp;!<\/li><\/ul>\n\n\n\n<h3 id=\"seasonings-7b879fea-c0c5-4cb0-9d37-c022016d12bb\"><strong>Les assaisonnements<\/strong><\/h3>\n\n\n\n<ul><li><strong>Basilic &ndash;<\/strong> le meilleur basilic &agrave; utiliser pour ce plat est le basilic g&eacute;nois ou doux&thinsp;; le basilic standard pourrait trop avoir un go&ucirc;t de menthe. Tout de cette plante a &eacute;t&eacute; utilis&eacute;e : la tige pour rehausser le go&ucirc;t et les feuilles &eacute;videmment.<\/li><li><strong>Bouillon de l&eacute;gumes &ndash;<\/strong> comme les tomates seules ne sont pas assez juteuses pour t&rsquo;amener au r&eacute;sultat final, tu dois donc ajouter un peu plus de liquide dans la casserole pour ramollir compl&egrave;tement le pain. Pour mon liquide suppl&eacute;mentaire, j&rsquo;ai utilis&eacute; un bouillon de l&eacute;gumes qui apporte, en plus, du go&ucirc;t (eau + bouillon en poudre).<\/li><li><strong>Sel &ndash;<\/strong> j&rsquo;en ai mis tr&egrave;s peu, puisque le bouillon de l&eacute;gumes &eacute;tait suffisamment sal&eacute;.<\/li><\/ul>\n\n\n\n<h2 id=\"comment-la-faire-etape-par-etape\"   >Comment la faire &eacute;tape par &eacute;tape<\/h2>\n\n\n\n<p>Pour faire ce plat, l&rsquo;objectif est de r&eacute;duire compl&egrave;tement le pain en bouillie, sans croustillant du tout. L&rsquo;ajout d&rsquo;un liquide dans la cocotte, tel qu&rsquo;un bouillon de l&eacute;gumes, t&rsquo;aidera &agrave; y parvenir. Par contre, si tu utilises du pain d&eacute;j&agrave; frais plut&ocirc;t que rassis ou s&eacute;ch&eacute;, tu seras encore plus proche de la ligne d&rsquo;arriv&eacute;e.<\/p>\n\n\n\n<figure
