Enrob&eacute;es d&rsquo;une succulente saveur enveloppante de tomates italiennes uniques, elles se cuisinent &agrave; la fa&ccedil;on : m&eacute;lange-les et oublie-les (en parlant de la pr&eacute;pa des ingr&eacute;dients).<\/p>\n\n\n\n<p>Ouais&thinsp;! Quelque chose de moins de 15, 17 cm (6, 7 pouces) de long et d&rsquo;environ 1,5 cm (1 pouce) de diam&egrave;tre est id&eacute;al. Les jeunes courgettes, ayant bien pouss&eacute;, sont habituellement plus d&eacute;sirables en raison de leur peau compacte, de leurs petits p&eacute;pins, de leur tendret&eacute; et de leur douceur.<\/li>\n\n\n\n<li><strong>Tomates italiennes &ndash;<\/strong> j&rsquo;ai utilis&eacute; les fameuses tomates San Marzano, lesquelles sont <a href=\"https:\/\/translate.google.com\/translate?hl=en&amp;sl=auto&amp;tl=fr&amp;u=https%3A%2F%2Fwww.marthastewart.com%2F7616623%2Fsan-marzano-tomatoes-explained\">consid&eacute;r&eacute;es comme &eacute;tant les meilleures tomates au monde<\/a>, la cr&egrave;me de la cr&egrave;me, l&rsquo;&eacute;talon-or, et ce, m&ecirc;me en conserve &mdash; on ne peut la trouver fra&icirc;che en Am&eacute;rique du Nord. Apparemment, pour savoir quelle marque de bo&icirc;te de conserve est la meilleure, on ne doit voir aucun morceau, aucune sauce, mais rien que des tomates enti&egrave;res &agrave; la chair ferme avec un peu de leur jus. Seulement, &ccedil;a, tu ne le sauras qu&rsquo;apr&egrave;s en avoir ouvert plusieurs.<\/li>\n\n\n\n<li><strong>Oignon &ndash;<\/strong> j&rsquo;aime beaucoup cuisiner avec l&rsquo;oignon rouge, car je le trouve plus go&ucirc;teux que l&rsquo;oignon jaune traditionnel (ou peut-&ecirc;tre que j&rsquo;imagine des choses). Hazan trouve qu&rsquo;il donne un arri&egrave;re-go&ucirc;t assez piquant, mais je ne sais, &agrave; toi de voir.<\/li>\n\n\n\n<li><strong>Ail &ndash;<\/strong> si tu peux en trouver, je dis bien si, choisis les vari&eacute;t&eacute;s Georgian Fire pour une saveur riche, harmonieuse et chaleureuse ou Rocambole pour une saveur profonde et ronde.<\/li>\n\n\n\n<li><strong>Aromates &ndash;<\/strong> prends du persil plat et du basilic g&eacute;nois.<\/li>\n<\/ul>\n\n\n<a href=\"#wprm-recipe-container-90173\" data-recipe=\"90173\" style=\"color: #333333;\" class=\"wprm-recipe-jump wprm-recipe-link wprm-jump-to-recipe-shortcode wprm-block-text-normal\">Voir la fiche de recettes pour conna&icirc;tre les quantit&eacute;s exactes.<\/a>\n\n\n<div class=\"is-layout-flow wp-block-group feast-box-secondary has-background\" style=\"background-color:#f8f1f4\"><div class=\"wp-block-group__inner-container\">\n<h3 id=\"h-de-simples-substitutions-ou-ajouts\"><strong>De simples substitutions ou ajouts<\/strong><\/h3>\n\n\n\n<ul>\n<li><strong>Courgettes &ndash;<\/strong> ne te g&ecirc;ne pas &agrave; ajouter des courgettes jaunes.<\/li>\n\n\n\n<li><strong>Tomates italiennes en bo&icirc;te &ndash;<\/strong> utilise des tomates anciennes (ancestrales) fra&icirc;ches.<\/li>\n\n\n\n<li><strong>Oignon + ail &ndash;<\/strong> si tu as une digestion faible ou que tu dois suivre un <a href=\"https:\/\/bitingintolife.net\/fr\/guide-supreme-sur-le-regime-faible-en-fodmap\/\">r&eacute;gime faible en FODMAP<\/a>, utilise la partie verte des oignons verts et mon <a href=\"https:\/\/bitingintolife.net\/fr\/huile-parfumee-a-lail-faible-en-fodmap\/\">huile parfum&eacute;e &agrave; l&rsquo;ail<\/a>.<\/li>\n\n\n\n<li><strong>Aromates &ndash;<\/strong> exp&eacute;rimente avec de l&rsquo;origan ou des herbes italiennes.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<h2 id=\"comment-faire-ce-plat-pas-a-pas\"  >Comment faire ce plat pas &agrave; pas<\/h2>\n\n\n\n<p>Cela commence par un filet d&rsquo;huile d&rsquo;olive, de l&rsquo;oignon et de l&rsquo;ail &eacute;minc&eacute;s. Viennent ensuite le persil, les tomates et leur jus &#9312;. Enfin, les courgettes se m&ecirc;lent &agrave; la sauce de sorte qu&rsquo;elles en soient compl&egrave;tement enrob&eacute;&nbsp; &#9313;. Apr&egrave;s une vingtaine de minutes de cuisson sur la cuisini&egrave;re, tu enfournes la cocotte et laisses cuire jusqu&rsquo;&agrave; ce que les courgettes soient tr&egrave;s molles &mdash; presque assez molles pour se d&eacute;composer, mais pas tout &agrave; fait &#9314;. Tu n&rsquo;as qu&rsquo;&agrave; suivre les trois premi&egrave;res &eacute;tapes avant de passer &agrave; la suivante.<\/figcaption><\/figure>\n\n\n\n<h2 id=\"les-cles-du-succes-mes-meilleurs-conseils\"  >Les cl&eacute;s du succ&egrave;s : mes meilleurs conseils<\/h2>\n\n\n\n<p><strong><em>Nettoie bien la courgette<\/em><\/strong><\/p>\n\n\n\n<p>La peau mince de la courgette est facilement p&eacute;n&eacute;trable par la terre, ce qui est difficile &agrave; d&eacute;tecter jusqu&rsquo;au moment o&ugrave; le son <em>scrotch<\/em> r&eacute;sonne entre tes deux tempes. Bien que la courgette soit occasionnellement libre de terre, la chose plus circonspecte &agrave; faire est de pr&eacute;sumer qu&rsquo;il y en a d&rsquo;incrust&eacute; dans la peau. Par cons&eacute;quent, tu dois en lib&eacute;rer la courgette et la retirer comme d&eacute;crit ci-dessous :<\/p>\n\n\n\n<ul>\n<li>Dans un grand bol, fais tremper les courgettes dans de l&rsquo;eau froide pendant entre 15 et 20 min.<\/li>\n\n\n\n<li>Rince la courgette de fond en comble sous l&rsquo;eau froide, la frottant rapidement avec les mains ou un tissu rugueux pour enlever toute la terre qui reste encore incrust&eacute;e dans la peau.<\/li>\n\n\n\n<li>Coupe les deux extr&eacute;mit&eacute;s de la courgette et coupe-la comme demand&eacute; dans la recette.<\/li>\n<\/ul>\n\n\n\n<p><strong><em>Mise sur des tomates bien m&ucirc;res<\/em><\/strong><\/p>\n\n\n\n<p>Hazan propose de prendre des tomates italiennes qui sont r&eacute;ellement m&ucirc;res et fra&icirc;ches, &agrave; la forme &eacute;troite et allong&eacute;e. Elles dotent au plat une saveur dense, d&rsquo;une douceur fruit&eacute;e et ample en bouche plut&ocirc;t que d&rsquo;avoir un go&ucirc;t acide. Celles-ci peuvent &ecirc;tre des tomates San Marzano (offertes en conserve seulement) ou des tomates italiennes appel&eacute;es Roma ou olivettes fra&icirc;ches.<\/p>\n\n\n\n<p>Elles ont beaucoup moins de p&eacute;pins, leur chair est plus ferme et leur jus est moins aqueux que toutes autres vari&eacute;t&eacute;s. Comme cette sorte contient moins de liquide &agrave; faire bouillir, elle cuit plus rapidement, donnant cette saveur fra&icirc;che et franche, si caract&eacute;ristique des sauces italiennes.<\/p>\n\n\n\n<p>&Agrave; d&eacute;faut d&rsquo;en trouver, attribue les m&ecirc;mes crit&egrave;res pour les autres vari&eacute;t&eacute;s. Peu importe si elles sont grosses ou petites, d&eacute;licatement arrondies ou nervur&eacute;es (par exemple, tomates ancestrales).<\/p>\n\n\n\n<p>Ce qui compte, c&rsquo;est que leur chair soit dense et m&ucirc;re et que dans la cocotte\/casserole, elles produisent une sauce tomate et non du jus de tomate.<\/p>\n\n\n\n<p><strong><em>Ne surcuis pas la courgette<\/em><\/strong><\/p>\n\n\n\n<p>Ce paragraphe est beaucoup moins prolixe. Le mot d&rsquo;ordre : on ne veut pas que la courgette se d&eacute;compose. Tu sauras que les courgettes sont cuites lorsqu&rsquo;elles deviennent tr&egrave;s molles. Certaines seront l&eacute;g&egrave;rement translucides&thinsp;; d&rsquo;autres non.<\/p>\n\n\n\n<p><strong><em>Ne l&eacute;sine pas sur la qualit&eacute; de l&rsquo;huile d&rsquo;olive<\/em><\/strong><\/p>\n\n\n\n<p>Bon, &ccedil;a, c&rsquo;est chose acquise. Toutes les qualit&eacute;s d&rsquo;huile peuvent bien &ecirc;tre commercialis&eacute;es en tant qu&rsquo;huile d&rsquo;olive, mais pour avoir une recette italienne authentique, la seule qui devrait &ecirc;tre envisag&eacute;e, c&rsquo;est celle dot&eacute;e de la mention &laquo; <em>extra-vierge &raquo;<\/em>.<\/p>\n\n\n\n<p>Il y a un &eacute;ventail d&rsquo;ar&ocirc;mes et de saveurs &mdash; d&eacute;licatement fragrante, &agrave; go&ucirc;t de noisette, piquante, herbeuse, fruit&eacute;e, etc.) &mdash;, alors go&ucirc;tes-en plusieurs jusqu&rsquo;&agrave; s&eacute;lectionner celle qui te pla&icirc;t.<\/p>\n\n\n\n<p>&Eacute;vite &agrave; tout prix les huiles d&rsquo;olive qui donnent une sensation d&rsquo;&ecirc;tre trop grasses, qui donnent l&rsquo;impression d&rsquo;&ecirc;tre collantes et qui ont une odeur terreuse ou rance.<\/p>\n\n\n\n<h3>L&rsquo;&eacute;quipement essentiel<\/h3>\n\n\n\n<ul>\n<li><strong>Cocotte en fonte &ndash;<\/strong> la mienne a un volume, je crois, de <a href=\"https:\/\/www.amazon.ca\/gp\/product\/B0001DJVGK\/ref=as_li_qf_asin_il_tl?ie=UTF8&amp;tag=bitingintolife-20&amp;creative=330641&amp;linkCode=as2&amp;creativeASIN=B0001DJVGK&amp;linkId=88f3dbf3f1e5ad28f0bd3788b16479d8\" rel=\"nofollow\">4 pintes (3,78 L) et est de la marque Lodge<\/a> (par contre, je ne me souviens pas d&rsquo;avoir pay&eacute; aussi cher).
