Ce sont les clous de girofle et le piment fort qui lui donnent un profil de saveur unique.<\/p>\n\n\n\n<p><br>Il <strong>se pr&eacute;pare rapidement<\/strong> et a besoin de <strong>deux ingr&eacute;dients essentiels <\/strong>: les haricots et le riz. Il lui fait un bon accompagnement, d&rsquo;ailleurs. Il convient &eacute;galement de mentionner que le 12 janvier 2010, un gros tremblement de terre a secou&eacute; les insulaires et a co&ucirc;t&eacute; la vie &agrave; plus de 230 000 habitants. Alors, je voulais rendre hommage aux peuples de ce pays.<\/p>\n\n\n\n<p>En faisant la recherche pour cette recette, j&rsquo;ai constat&eacute; que beaucoup de pays avaient leur propre version : le riz aux haricots dominicain, jama&iuml;cain, puerto ricain, <a href=\"https:\/\/bitingintolife.net\/fr\/costa-rica-et-riz-aux-haricots-a-la-caribeenne-iv\/\">costaricain<\/a>, mexicain&hellip; Cela est s&ucirc;rement li&eacute; aux traditions de l&rsquo;Afrique de l&rsquo;Ouest, h&eacute;las, d&eacute;plac&eacute;es par la traite de l&rsquo;esclavage.<\/p>\n\n\n\n<p>En tout cas, j&rsquo;en ai go&ucirc;t&eacute; en provenance de diff&eacute;rentes r&eacute;gions des Antilles, surtout, et je pr&eacute;f&egrave;re de loin le style ha&iuml;tien : <em>diri kole<\/em> ou du riz coll&eacute; en fran&ccedil;ais. Accuse-moi simplement d&rsquo;&ecirc;tre biais&eacute;e, j&rsquo;ai grandi &agrave; manger de la nourriture ha&iuml;tienne.<\/p>\n\n\n\n<p>Le riz aux haricots ha&iuml;tien est un plat <strong>riche en prot&eacute;ines<\/strong>, <strong>sain<\/strong> et <strong>consistant<\/strong>. Il a une <strong>chaleur enveloppante<\/strong>, un <strong>parfum capiteux d&rsquo;&eacute;pices<\/strong> &mdash; exhal&eacute; par l'assaisonnement typique ha&iuml;tien et le piment bouc &mdash; et occasionnellement, une saveur subtile de noix de coco.<\/p>\n\n\n\n<p>Le piment bouc donne la personnalit&eacute; &agrave; notre cuisine. Pas toujours accessible dans les march&eacute;s courants, le piment habanero remplit la m&ecirc;me fonction. Peu importe, cette vari&eacute;t&eacute; de piment est assez puissante et audacieuse pour envo&ucirc;ter toutes les &acirc;mes. C&rsquo;est vraiment facultatif.&nbsp;<\/li><li><strong>Riz &agrave; long grain &ndash;mon<\/strong> riz de pr&eacute;dilection est le riz au jasmin, car il donne un bon go&ucirc;t.<\/li><li><strong>Assaisonnement de base ha&iuml;tien &ndash;<\/strong> oignon, &eacute;chalote, ail, poivron vert ou Epis.<\/li><li><strong>Clous de girofle &ndash;<\/strong> cela peut &ecirc;tre en entier ou moulu.<\/li><li><strong>Piment antillais &ndash;<\/strong> normalement, les Ha&iuml;tiens incorporent le piment bouc. Il est tr&egrave;s parfum&eacute;, &agrave; la saveur caract&eacute;ristique fruit&eacute;e et on le retrouverait peut-&ecirc;tre dans les &eacute;piceries antillaises ou ethniques. Aussi appel&eacute; piment antillais ou piment cabri (sur l'&icirc;le de la R&eacute;union), c&rsquo;est une vari&eacute;t&eacute; du piment habanero &mdash; que j&rsquo;ai utilis&eacute; ici. Peu importe ce que tu choisis, ce sera toujours une excellente recette.<\/li><li><strong>Dope l&rsquo;apport nutritif &ndash;<\/strong> opte pour du riz brun &agrave; la place du riz blanc pour augmenter la teneur en prot&eacute;ines ou en fibres. Je recommande d'utiliser une po&ecirc;le antiadh&eacute;sive de haute qualit&eacute; si c&rsquo;est possible.<\/li><\/ul>\n<\/div><\/div>\n\n\n\n<h2 id=\"comment-faire-le-riz-aux-haricots-haitien-pas-a-pas\"  ><strong><strong>Comment faire le riz aux haricots ha&iuml;tien pas &agrave; pas<\/strong><\/strong><\/h2>\n\n\n\n<p>Ce plat ha&iuml;tien traditionnel se pr&eacute;pare normalement en faisant tremper les haricots la veille et c&rsquo;est le lendemain que la cuisson du riz commence. Il est aussi possible de le r&eacute;aliser dans une mijoteuse, en les faisant cuire pendant une vingtaine de minutes. J&rsquo;aime le faire de la fa&ccedil;on traditionnelle, car en faisant tremper les haricots, on les gonfle en eau et on les rend plus comestibles et digestes. Aussi, on se d&eacute;barrasserait de ce qu&rsquo;on appelle les antinutriments. Peut-&ecirc;tre que la machine les pulv&eacute;rise, qui sait.<\/p>\n\n\n\n<p>Bref, ce plat commence donc par le pr&eacute;trempage des haricots rouges <meta charset=\"utf-8\">&#9312;. Je les fais bouillir ult&eacute;rieurement et facultativement, avec des morceaux de kombu et des assaisonnements <meta charset=\"utf-8\">&#9313;&nbsp;pour leur injecter du go&ucirc;t. Une fois les haricots cuits, tendres mais pas ramollis, je les filtre en r&eacute;servant l&rsquo;eau <meta charset=\"utf-8\">&#9314;. J&rsquo;ajoute l&rsquo;eau de haricots, les &eacute;pices, y compris le piment fort, puis le riz &#9317;. Tu peux bien les laisser au frigo ou &agrave; temp&eacute;rature ambiante sur ton plan de travail pendant la nuit. Deux choses se produisent ici : des ions sodium s&rsquo;ajoutent pour affaiblir la pectine et la d&eacute;composer en mol&eacute;cules plus petites, ce qui attendrit les haricots plus rapidement &agrave; la cuisson.<\/p>\n\n\n\n<p>Si tu oublies de faire cette &eacute;tape, ajoutes-en (environ une cuill&egrave;re &agrave; caf&eacute; par tasse de haricots secs) &agrave; l'eau de cuisson. De la sorte, les haricots cuisent presque la moiti&eacute; du temps que les haricots cuits sans &ccedil;a.<\/p>\n\n\n\n<p><strong><em>Des ingr&eacute;dients ramollis ne sont pas accueillis<\/em><\/strong><\/p>\n\n\n\n<p>S&rsquo;agissant des haricots, ne les touille pas trop quand tu les ajoutes dans la casserole sans quoi les amidons risquent de se lib&eacute;rer et de rendre le riz collant. En principe, si tu as opt&eacute; pour des haricots secs au d&eacute;part, tu diminues cet ennui.<\/p>\n\n\n\n<p>Pour ce qui est du riz, rince-le jusqu'&agrave; ce que l'eau soit claire, environ trois lavages, pour enlever l'amidon en exc&egrave;s. Une autre option est d&rsquo;enrober le riz de l&rsquo;huile de cuisson, de le griller l&eacute;g&egrave;rement et de le remuer dans la casserole. Enfin, une fois le riz dans l&rsquo;eau, remue-le une seule fois ou pas du tout.&nbsp;<\/p>\n\n\n\n<p>Une derni&egrave;re solution est de recouvrir ta casserole et de la mouler de papier d&rsquo;aluminium sous son rebord vers le bas pour emprisonner la vapeur et emp&ecirc;cher la condensation. Cela aide &agrave; donner une texture de riz plus s&egrave;che et granuleuse.&nbsp;<\/p>\n\n\n\n<p><strong><em>Isole bien le piment fort<\/em><\/strong><\/p>\n\n\n\n<p>Tu peux d&eacute;cider de l&rsquo;intensit&eacute; de la capsa&iuml;cine diffus&eacute;e dans ton riz aux haricots. Si tu la veux tr&egrave;s faible, garde-le entier pendant la cuisson. Si tu la veux &eacute;lev&eacute;e, fais de l&eacute;g&egrave;res incisions (environ quatre en forme de croix sur le bout) avant de le plonger dans la pr&eacute;paration. Mais fais gaffe &agrave; ce que les graines ne s&rsquo;&eacute;chappent pas.&nbsp;<\/p>\n\n\n\n<p>Avertissement&thinsp;! Un piment fort qui &eacute;clate dans le <em>diri kole<\/em>, voire tous tes repas en cuisson, risque de te faire appeler les pompiers&thinsp;!&nbsp;<\/p>\n\n\n\n<h3><strong>L'&eacute;quipment essentiel<\/strong><\/h3>\n\n\n\n<ul><li><strong>Cocotte &ndash;<\/strong>&nbsp;<a href=\"https:\/\/amzn.to\/3eDIDSc\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">la mienne est d'environ 4 litres<\/a>.<\/li><li><strong>Tamis <\/strong><\/li><li><strong><strong>Tasse &agrave; mesurer<\/strong><\/strong><\/li><li><strong><strong><strong>Couteau de chef ou &agrave; l&eacute;gumes &ndash;<\/strong><\/strong><\/strong>&nbsp;mon couteau de chef est un&nbsp;<a href=\"https:\/\/amzn.to\/3pDSs9q\" rel=\"noreferrer noopener\" target=\"_blank\">couteau japonais muni de fossettes de la marque Mac<\/a>. Mon&nbsp;<a href=\"https:\/\/amzn.to\/3pDTwtW\" rel=\"noreferrer noopener\" target=\"_blank\">couteau &agrave; l&eacute;gumes<\/a>&nbsp;est de la m&ecirc;me marque.
